Abstract

Metabolic activities of microorganisms are carried out through enzymes. The temperature effects the metabolic activity of microorganisms. There are minimum, optimum, and maximum growth temperatures. At the optimum temperature, the activities of enzymes and growth of microorganisms are maximum. Microbial growth is inactivated near minimum temperature. Since, enzymes are inactivated near and below the minimum temperature. Growth of microorganisms decreases from optimum to maximum and enzyme denaturation start at near maximum temperature. Microorganism can divide into three groups depending on optimum growth temperature: psychrophiles, mesophiles, and thermophiles. Susceptibility of microorganisms to temperatures can be indicated by two terms: the thermal death point and the thermal death time. Different factors influence effects of temperature on microorganisms. In this practice, the effects of temperature on microorganisms are evaluated.
