Benefits of a group-based running session on feelings of energy and fatigue: No augmenting effect of green exercise during the defoliation season

This randomized controlled trial investigated the impact of a brief session of group-based running on feelings of energy and fatigue, comparing exercise in a local nature reserve versus an outdoor built environment, and a sedentary control condition. Sixty-six physically active university students participated, with 56 providing full data for each time point. Consistent with previous research, participants in both exercise groups reported significantly increased energy and decreased fatigue compared to those in the sedentary control group. However, the type of outdoor environment did not significantly influence the magnitude of improvements. Contrary to expectations, there was no significant difference in energy enhancement or fatigue mitigation between participants who jogged in a local nature reserve versus those who jogged on a cinder track in an urbanized area. The study discusses potential reasons for this, including seasonal variations in forest volatile organic compounds (FVOCs) concentrations, which may impact the psychological effects associated with forest environments. Further research is needed to better understand the complex relationship between exercise, environment, and feelings of energy/feelings of fatigue.

Characterization and source apportionment of ambient VOC concentrations: Assessing ozone formation potential in the Barnett shale oil and gas region

Atmospheric concentration and distribution of volatile organic compounds (VOC) are influenced by localized emissions and the fate and transport of secondary products formed through photochemical reactions. This study identifies the sources of VOC and its contribution to ozone formation in the Barnett Shale region, specifically in Denton, Texas, during the ozone seasons of 2015 through 2022. A total of 31 critical ozone precursor VOC compounds were observed at this site with an average total VOC concentration of 146 ppb-C, with n-alkanes from extensive oil and gas activities in the area contributing to 96.64% of the total VOC. Source apportionment using dispersion normalized positive matrix factorization (DN-PMF) identified eight VOC sources, with natural gas emissions (72%) being the dominant source followed by a combined source of natural gas combustion and aviation emissions (8.3%). Ozone formation potential (OFP) by VOC species was calculated using the propylene-equivalent concentration (propy-equiv) method. OFP calculated for all the apportioned sources highlighted that natural gas sources contributed significantly to the ozone formation in this region besides isoprene from biogenic sources and reactive alkenes from urban and industrial activities. This study underscores the critical role of slow-reacting n-alkanes along with other highly reactive VOC from urban and industrial sources influencing ambient air quality and it identifies strategies for mitigating ground-level ozone in urban areas affected by oil and gas extraction and production.

Diffusion behavior and environmental impact of odorants and TVOCs detected in a wastewater treatment plant for collaborative leachate treatment in Northwest China

Wastewater treatment plants (WWTPs) are major sources of volatile gaseous compounds, especially in mixed-source systems such as domestic wastewater and landfill leachate. This study aimed to investigate the emission behavior and environmental impact of gaseous substances, such as hydrogen sulfide (H2S), ammonia (NH3), carbon sulfide (CS2), and phosphine (PH3), at a WWTP in Northwest China. Odorants were detected in the air surrounding the grid room (XGS), biochemical treatment tank (SHC), secondary sedimentation tank (ECC), and sludge dewatering room (NTS). For comparison, the upwind boundary (O-SF) and downwind boundaries (O-XF) monitoring points were used, with odor concentrations ranging from 3.95 to 725.27 odor units. The concentration ranges of the odorant substances were 5.27–88.69, 5.61–71.96, 5.70–32.63, and 0.12–5.87 mg/m3 for H2S, NH3, CS2, and PH3, respectively. Meteorological factors such as temperature, relative humidity, and wind speed and direction substantially influence odorant emissions. The concentrations of various odorants and volatile organic compounds (VOCs) detected at the O-XF monitoring point were higher than those detected at the O-SF monitoring point, indicating that the wind intensified their diffusion toward the downwind plant boundary. The average odor intensities of odorant substances emitted from wastewater or sludge treatment equipment were 3.37, 5.09, 4.42, 2.00, and 3.82 for total VOCs, H2S, NH3, CS2, and PH3, respectively. Among them four, with downwind diffusion, only H2S presented olfactory and chronic toxicity risks based on Gaussian plume model calculations. The hazard index ranking across monitoring sites was XGS > NTS > SHC > ECC > O-XF > O-SF. These findings emphasize the urgent need for effective measures to control and mitigate gaseous pollutants emitted by collaborative WWTPS, thereby protecting environmental quality and public health.

The effect of cold plasma treatment on the fruit quality and aroma components of winter jujubes (Ziziphus jujuba Mill. 'Dongzao').

Cold plasma (CP) is a novel environmental-friendly preservation technology that causes minimal damage to fruits. The flavor and quality of winter jujubes have decreased with the extended storage time. Currently, the research on the use of CP on winter jujubes (Ziziphus jujuba Mill. 'Dongzao') mainly focuses on the effect of the treatment on storage quality. There is limited research on the effect of CP treatment on the flavor of winter jujubes. This study used different CP (80kV) treatment durations (0, 5, and 10min) to treat winter jujubes. The appropriate treatment time was selected by observing the changes in color, respiratory intensity, soluble sugar content, total acid content, and vitamin C (VC) content of winter jujubes. Amino acid analyzer and headspace solid-phase microextraction in combination with gas chromatography coupled with mass spectrometric detection were used to analyze the effect of CP treatment on the flavor compounds of winter jujubes. The results showed that the 5-min CP treatment could significantly slow down the red coloration of winter jujube while maintaining high soluble sugar, total acid, and VC content. At the respiration peak, the respiratory intensity of the 5-min CP treatment group was 0.74 mg CO2·kg-1·h-1 lower than that of the control group (p < 0.05). CP treatment slowed down the decrease in the content of amino acids and volatile organic compounds (such as 2-methyl-4-pentenal, 2-hexenal, and 3-hexenal) in winter jujubes. This study will provide basic data for applying CP preservation technology in postharvest winter jujubes.

An Indoor Air Quality Analysis in Newly Constructed Apartments

This study analyzes the indoor air quality inspections of newly constructed apartments by the Busan Institute of Health and Environment for the last three years (2021-2023). Of the 41 inspections, 33 exceeded the recommended standard, and the average excess rate was 80.5%. When classified by measuring households, 148 out of 332 exceeded the standards, whereas, the average excess rate by household was 44.6%. Benzene was exceeded in two out of the 332 households; therefore, the excess rate was only 0.6%. However, the relative standard deviation was the largest, showing as the highest item in the scattergram. The average concentration of toluene was 1,006.0 µg/m3, which was 100.6% of the recommended standard and was exceeded by 138 households; hence, the excess rate was 41.6%. All six items(Formaldehyde, Benzene, Toluene, Ethylbenzene, Xylene, Styrene) reached the highest concentration in spring or summer when the indoor temperature increased. The average concentration of toluene in July was 1,922 µg/m3, close to 1.9 times the recommended standard; toluene is considered an item of particular concern in summer. In the correlation analysis with indoor temperature, the formaldehyde coefficient of determination was 0.4855, regarded as somewhat significant; it was difficult to confirm the correlation with temperature for the other five items, including benzene. In correlation with relative humidity, formaldehyde showed the same tendency as indoor temperature, with a coefficient of determination of 0.4404, which is believed to be due to its small molecular weight and high solubility. Due to the chimney effect, high concentrations of volatile organic compounds could be confirmed at low atmospheric pressure in the upper floors, and this trend was most evident for formaldehyde. For most items(Formaldehyde, Benzene, Toluene, Ethylbenzene, Styrene), a negative correlation was confirmed in which the emission amount decreased as the number of households increased. For large apartment houses, it is believed that it is due to sufficient bake-out and flush-out according to the adequate construction period and the use of eco-friendly and high-end building materials. Small apartments are classified together with many small houses. The emission concentration of small houses is relatively high because the proportion of the surface area where pollutants are released is high.

Design of Oil Mist and Volatile-Organic-Compound Treatment Equipment in the Manufacturing Plant

To effectively confront the acute challenge of global warming, at the present stage, the Chinese government has designated carbon reduction as the core objective to accomplish the coordinated control of greenhouse gas and pollutant emissions. As China is a major manufacturing country, with the continuous improvement of air emission standards, it is particularly necessary to carry out the design of more efficient volatile organic pollutant emission devices. This study takes a treatment system with a waste gas ventilation volume of 6 × 104 m3·h−1 as an example, adopts the end treatment approach of adsorption and catalytic combustion coupling, and designs a purification device composed of multistage oil-mist recovery, electrostatic adsorption, dry filtration, activated-carbon adsorption and desorption, catalytic combustion, etc. It also employs the fuzzy proportional-integral-derivative fine temperature control algorithm, and the temperature overshoot was decreased by 85%. The average emission concentration of volatile organic compounds at the equipment outlet is 6.56 mg·m−3, and the average removal rate is 93.99%, far surpassing the national emission standards. The device operates efficiently and stably, confirming that the end-coupled treatment system based on the adaptive fuzzy proportional-integral-derivative temperature control strategy can effectively handle volatile organic compounds with oil mist and holds significant promotion and research value.

Residential proximity to conventional and unconventional wells and exposure to indoor air volatile organic compounds in the Exposures in the Peace River Valley (EXPERIVA) study

BackgroundIn a previous study located in Northeastern British Columbia (Canada), we observed associations between density and proximity of oil and gas wells and indoor air concentrations of certain volatile organic compounds (VOCs). Whether conventional or unconventional well types and phases of unconventional development contribute to these associations remains unknown. ObjectiveTo investigate the associations between proximity-based metrics for conventional and unconventional wells and measured indoor air VOC concentrations in the Exposures in the Peace River Valley (EXPERIVA) study samples. MethodsEighty-four pregnant individuals participated in EXPERIVA. Passive indoor air samplers were analyzed for 47 VOCs. Oil and gas well legacy data were sourced from the British Columbia Energy Regulator. For each participant's home, 5 km, 10 km and no buffer distances were delineated, then density and Inverse Distance Square Weighted (ID2W) metrics were calculated to estimate exposure to conventional and unconventional wells during pregnancy and the VOC measurement period. Multiple linear regression models were used to test for associations between the well exposure metrics and indoor air VOCs. For exposure metrics with >30% participants having a value of 0, we dichotomized exposure (0 vs. >0) and performed ANOVAs to assess differences in mean VOCs concentrations. ResultsAnalyses indicated that: 1) conventional well density and ID2W metrics were positively associated with indoor air acetone and decanal; 2) unconventional well density and ID2W metrics were positively associated with indoor air chloroform and decamethylcyclopentasiloxane, and negatively associated with decanal; 3) drilling specific ID2W metrics for unconventional wells were positively associated with indoor air chloroform. ConclusionOur analysis revealed that the association between the exposure metrics and indoor air acetone could be attributed to conventional wells and the association between exposure metrics and indoor air chloroform and decamethylcyclopentasiloxane could be attributed to unconventional wells.

Co-fermentation of Lactiplantibacillus and Streptococcusccus enriches the key-contribution volatile and non-volatile components of jujube juice

Lactic acid bacteria (LAB) fermentation can enhance the quality and flavor characteristics of fruit juice. Herein, the impact of individual Lactiplantibacillus plantarum subsp. plantarum (L. plantarum) or Streptococcus thermophilus (S. thermophilus) and co-fermentation of them on jujube juice was compared, and their quality characteristics, volatile and non-volatile compounds were investigated. The results showed that the co-fermentation of selected LAB strains effectively improved the quality of fermented jujube juice (FJJ) as expected, and the types and content of volatile organic compounds (VOCs) increased in FJJs. Among them, the co-fermented sample posed relatively high content of aroma-active compounds with OAV ≥1 (nonanal, decanal, etc), benzaldehyde and acids compared with others, contributing to a more attractive and pleasant flavor. Moreover, non-targeted metabolomic analysis identified 114 and 79 differential metabolites (DMs) between co-fermented and L. plantarum fermented or S. thermophilus fermented samples, respectively. Notably, carboxylic acids and their derivative metabolites as well as organic acids were the crucial components affecting the quality of FJJ. Furthermore, metabolic pathways of DMs of different samples were predominantly enriched in “biosynthesis” and “metabolism”, such as aline, leucine, and isoleucine biosynthesis pathway. Therefore, co-fermentation could enrich the acids, essential amino acid, and VOCs, thereby improving its quality and flavor characteristics. The correlation analysis revealed that most of key VOCs were positively or negatively correlated with D-galacturonate, indicating the importance of D-galactose pathway. Thus, this study provided a theoretical foundation for enhancing the quality and flavor of jujube juice through LAB co-fermentation, offering valuable insights for improving the juice processing.

Influence of phospholipid structures on volatile organic compounds generation in model systems

To investigate the regularities and differences in oxidation products of phosphatidylcholine (PC) and phosphatidylethanolamine (PE) by gas chromatography-mass spectrometry (GC–MS), and examine the influence of variations in fatty acid compositions and head groups on the kinds and contents of volatile organic compounds (VOCs) generated. A total of 42 VOCs were identified from PE (16:0–18:2), PC (16:0–18:2), and PC (16:0–18:1), with aldehydes and ketones being the main VOCs in three phospholipids (PLs). The content of most VOCs produced by PE (16:0–18:2), PC (16:0–18:2), and PC (16:0–18:1) increases with the increase of oxidation temperature and time. Reached peak at 175 °C for 60 min. The total VOCs contents generated by PE (16:0–18:2) and PC (16:0–18:2) were higher than those produced by PC (16:0–18:1), with PC (16:0–18:2) showing the highest total VOCs contents. PLs exhibited three mass loss processes with increasing temperature, namely stability, reduction, and stabilization. PC (16:0–18:2) experienced the highest mass loss, followed by PE (16:0–18:2), while PC (16:0–18:1) showed the least mass loss. These findings showed that polyunsaturated fatty acids were more susceptible to oxidation and degradation during oxidation, and the presence of choline groups in the form of PE may enhance the oxidative stability of fatty acyl groups compared to PC.

Dynamics of indoor volatile organic compounds and seasonal ventilation strategies for residential buildings in Northeast China

This study utilized a questionnaire survey to collect data from 265 residents in Changchun, encompassing building characteristics, ventilation frequency and overall satisfaction with the indoor environment. Statistical analysis revealed significant disparities in ventilation frequency and satisfaction with indoor temperature. The survey results indicate that the primary mode of indoor air exchange amongst Changchun residents is window ventilation, accounting for 93%. Field tracking was conducted to measure indoor air concentrations of volatile organic compounds (VOCs) in residential buildings during winter and summer seasons. The study revealed a significant increase in the average indoor/outdoor (I/O) ratio of the targeted 25 VOC concentrations in winter, rising from 10.8 to 17.7. The findings underscore indoor sources as predominant contributors to the measured VOCs. Temperature, humidity and room functions are the main factors affecting VOC concentration. Higher temperatures and increased relative humidity both contributed to elevated indoor VOC levels. This study recommended the opening of more windows during high temperature and high humidity in summer, to maintain good indoor air quality and effectively age the emission of VOCs from furniture. This study contributes to the enhancement of the database on indoor air quality and effective ventilation strategies in cold regions for safeguarding public health.

Low temperature conditioning and nitric oxide treatment reduced chilling injury and altered fatty acid metabolism of flat peaches

Low-temperature conditioning is a recognized method for alleviating chilling injuries in flat peaches. However, long-term low-temperature storage can mitigate volatile organic compounds, thereby limiting fruit availability. To improve the supply of flat peaches, we investigated the combined effects of low-temperature conditioning and nitric oxide treatment on various parameters including physiological quality, volatile organic compounds, fatty acids, associated enzymes, and genes involved in the fatty acid pathway with the transcriptome sequencing analysis. The results indicated that low-temperature conditioning coordinated with 10 µL L−1 nitric oxide treatment possessed higher firmness and vitamin C content and restricted the content of malonaldehyde and relative electrical conductivity, thus maintaining the overall quality of flat peaches. In the study, 10 µL L−1 nitric oxide was employed for subsequent experiments. Moreover, higher contents of volatile organic compounds were supported by increased contents of palmitic acid, stearic acid, oleic acid, linoleic acid, linolenic acid, alcohol dehydrogenase, hydroperoxide lyase, and up-regulated genes of LOX2, LOX3, LOX6, ADH2, and ADH3. In summary, nitric oxide treatment effectively facilitated the recovery of volatile organic compounds in flat peaches during cold storage. Therefore, low-temperature conditioning and nitric oxide treatment can be a promising strategy to prevent the loss of volatile organic compounds by modulating the fatty acid pathway and associated genes.

Quantitative filter forensics for allergens and semivolatile organic compounds in residential buildings in Toronto, Canada

Quantitative filter forensics (QFF) is a method for estimating the time-averaged concentration of particle-bound containments using filter metadata and its extracted dust. In this study, QFF was applied to dust samples extracted from four types of HVAC filters deployed in 20 homes from December 2016 to December 2017 in Toronto, Canada. The analysis covered six allergens, eight phthalates, and 12 polycyclic aromatic hydrocarbons (PAHs). The allergen results from four homes showed elevated concentrations of cat and dog allergens (Fel d 1 and Can f 1) in homes with cats or dogs. All eight phthalates were detected, dominated by diisononyl phthalate (DiNP) and bis(2-ethylhexyl) phthalate (DEHP), with median concentrations of 4.27 ng/m³ and 4.20 ng/m³, respectively. All PAHs, except anthracene, were detected in over 50 % of the homes, with benzo[a]pyrene being the most abundant (median concentration of 0.067 ng/m³). Median concentrations of all semivolatile organic compounds (SVOCs) were lower in winter 2016 compared to spring 2017, potentially due to losses of more volatile SVOCs from filters because of higher filtration volumes in winter, in addition to differences in sources and ventilation rates. All phthalate and most PAH concentrations were one to two orders of magnitude lower compared to those found from QFF in apartments in Toronto social housing multi-unit residential buildings (MURB), indicating those with lower socio-economic status (SES) were exposed to higher SVOC concentrations. Occupant density was positively related to most phthalate and specific PAH concentrations, while environmental factors including room temperature, relative humidity, and supply air temperature were not.

Polymer composites from waste plastics and reclaimed rubber from tires for sustainable development

AbstractThe swift growth of the automobile industry has resulted in the generation of huge quantities of waste rubber from end‐of‐life tires. Incidentally, the humungous quantities of waste plastics that are an integral part of the legacy landfills/dumpsites, lying unattended and about which not many valorization schemes are available, pose various geoenvironmental issues apart from occupying a lot of landfill space. These situations might end up being a blessing in disguise if a strategy to utilize both waste rubber and waste plastic, segregated post landfill/dumpsite biomining, in tandem by manufacturing polymer composites by resorting to extrusion process followed by the injection molding, for different engineering applications. Thus, the physical, mechanical, thermal, morphological, and leaching properties of the manufactured polymer composites were evaluated in this study. The tensile strength and impact resistance of polymer composites were between 4.3–26.9 MPa and 9.4–20 kJ/m2, respectively. Their glass transition temperature lies between −81.13 and − 50.04°C. The leachable concentration of heavy metals and organic compounds was within acceptable limits for drinking water and permissible limits for inland surface water disposal. Therefore, this study contributes valuable insights into using waste materials for polymer composites manufacturing, which would be further helpful in achieving sustainable development goals and circular economy.

Integrated GC-MS and proteomics reveal the changes and correlations between flavor compounds and the proteome in surimi gels treated with high-temperature sterilization

The impact of high-temperature sterilization on the flavor of surimi gels were examined, alongside the utilization of tandem mass tag labeled quantitative proteomics to explore the correlations between flavor and proteome profiles. Notable increase was observed in lipid oxidation, protein degradation, and the types and total content of volatile organic compounds (VOC), particularly aldehydes. A total of 67 shared differentially expressed proteins (DEP) were identified, confirming the aggregation and degradation of proteins. Gene Ontology functional analysis revealed that proteins possibly linked to flavor were primarily concentrated in the myosin complex, motor activity, and hydrolase activity categories. The Kyoto Encyclopedia of Genes and Genomes pathway analysis highlighted a focus on the motor protein pathway. Correlation analysis between DEP and key VOC revealed that most DEP exhibited significant correlations with aldehydes and ketones such as octanal, pentanal, and (Z)-4-heptenal, with flavor-associated proteins mainly concentrated in structural, antioxidant, and redox proteins.

Chemical exposure from the Hebei spirit oil spill accident and its long-term effects on mental health

While evidence indicates that exposure to oil spill incidents can affect mental health, it is unclear whether the mental health effects result from the incident itself or from exposure to associated chemicals. Oil contains chemicals that can impact mental health and these chemicals may have long-term effects due to their persistence in the environment. To address the gap in current knowledge, we conducted cross-sectional and prospective analyses of data from adults who participated in the Health Effects of the Hebei Spirit Oil Spill study. To assess chemical exposure from oil spills, we used indirect exposure indicators such as distance from the contaminated oil band to residences and duration of clean-up work, along with direct exposure indicators such as urine metabolite concentrations of volatile organic compounds and polycyclic aromatic hydrocarbons. Mental health assessments covered posttraumatic stress disorder (PTSD), depression, state anxiety, and trait anxiety. In the cross-sectional analyses, all four mental health issues were found to be associated with proximity to the oil band (p-value<0.05) and showed a positive association with clean-up work duration (p-value<0.05). Cox regression analysis revealed that higher urinary t, t-muconic acid levels were associated with an increased risk of depression (Hazard Ratio [HR] = 1.55, 95 % Confidence Interval [CI] = 1.05–2.28), and elevated 1-hydroxypyrene levels increased the risk of PTSD (HR = 1.60, 95 % CI = 1.03–2.48). Additionally, higher urinary 2-naphthol levels were associated with increased state anxiety (HR = 1.39, 95 % CI = 1.00–1.93) and trait anxiety (HR = 1.64, 95 % CI = 1.15–2.32). These associations persisted even after controlling for distance and duration variables related to psychosocial exposure. Our findings suggest that environmental disaster response plans should prioritize minimizing chemical exposure while also considering the duration and nature of the mental health impacts.

Effects of exposure to volatile organic compounds (VOCs) content from paint on automobile paint workers in Nsukka, South Eastern Nigeria

BackgroundVolatile organic compounds (VOCs) fume in the workplace can act as an inducing agent to many health disorders. ObjectivesThis work investigated the effects of exposure to VOCs content from paint on the automobile paint workers in South Eastern Nigeria. MethodsA total of fifty (50) respondent participated in the study. Following the completion of informed consent form and well-structured questionnaire, blood samples were drawn and used for biochemical analysis. ResultsThe results of the haematological analysis showed a significant (p < 0.05) increase in white blood cell (WBC) cluster of differentiation 4 (CD4), and platelet (PLT), and a significant (p < 0.05) decrease in packed cell volume (PCV), hemoglobin (HB), lymphocytes (LYM) and eosinophil (EOS) of the exposed automobile paint workers compared to the control (unexposed workers). Results also showed significant (p < 0.05) increase in liver marker indices; alanine transaminase (ALT), aspartate transaminase (AST), total bilirubin (TB) and albumin (ALB) as well as significant (p < 0.05) decrease in Alkaline phosphatase (ALP), total protein (TP), direct bilirubin (DB). There was significant (p < 0.05) increase in urea, creatinine, potassium (K+), uric acid and nitric oxide concentrations and decrease in sodium (Na+) and bicarbonate (HCO3−) Again, results showed significant increase in Glutathione (GSH), and Glutathione peroxidase (GPx) and significant (p < 0.05) decrease in Superoxide dismutase (SOD) and Catalase (CAT). The Malondialdehyde MDA concentration showed varied significant (p < 0.05) difference based on ages. There was significant (p < 0.05) increase in luteinizing hormone (LH) and Follicle stimulating hormone (FSH), and significant (p < 0.05) decrease in the Testosterone (TET) concentrations of the exposed automobile paint workers compared to the unexposed workers. ConclusionsResult of this study suggests a toxic outcome due to exposure to VOCs in spray paint workers.

Volatile organic compounds (VOCs) in urban public transportation: Seasonal influences and variations

The present work aims to analyze the information related to the organic pollutants present inside the public transport units of León Guanajuato, Mexico, along winter, spring and fall seasons. Through the application of different selection criteria, a database was generated that allowed the analysis of the different selected pollutants and determine their behavior throughout the spring, autumn and winter seasons. These analyzes were carried out using different statistical tools like ANOVA, PCA, and correlation network maps. At least 23 compounds were selected as common pollutants along all the seasons, including aromatics, aliphatic, halogenated, polycyclic, and compounds with heteroatoms species. Results showed that the concentrations of Volatile Organic Compounds s such as hexane (1.5–3.0 µg/m³), dichlorobenzene (2.0–4.5 µg m−3), and toluene (5.0–12.0 µg m−3) varied significantly across the seasons, with higher levels observed in winter. The study highlights the influence of external environmental factors on indoor air quality within public transport units proven through statistical analysis. The results allowed to mention that the concentrations of Volatile Organic Compounds can vary significantly in different season along the year, as well as that the main pollutants vary according to the season, of which there are compounds that are only present during these periods.

Insight into the autochthonous lactic acid bacteria as starter culture for improving the quality of Sichuan radish paocai: Changes in microbial diversity and metabolic profiles

Paocai is a traditional Chinese fermented vegetable product popular in Asian countries. Recently, functional starters were used to control the fermentation process and improve the quality of paocai. In this study, three autochthonous lactic acid bacteria including Lactiplantibacillus plantarum LB6, Lactiplantibacillus pentosus LB3, and Weissella cibaria W51 were selected as starters and the effect of the starters on the fermentation of paocai was investigated. The results suggested that the inoculated fermentation led to a lower nitrite peak and more pronounced changes in pH and total titratable acid in the early stage of fermentation, compared with natural fermentation. Analysis of the flavor compounds indicated that the total content of volatile organic compounds of paocai through natural fermentation was significantly lower than that in inoculated fermentation. As for free amino acids, in the early stage of fermentation, the types and contents of free amino acids in the inoculated fermentation paocai were higher than those in the blank group. In the later stage of fermentation, the contents of amino acids representing umami and sweet tastes were also higher than those in the blank group. The bacterial community analysis showed that Lactobacillus and Lactococcus were the dominant bacteria in both inoculated fermentation and natural fermentation. Then, the correlations among physicochemical properties, microbial community and flavor compounds were revealed, and it was found that the dominant bacteria such as Lactococcus, Leuconostoc, Lactobacillus and Weissella displayed a considerable impact on the physical and chemical properties and flavor of paocai. In addition, the metabolic pathways involved in flavor formation and the abundance of related enzymes were elucidated. The abundance of enzymes involved in generating prephenic acid, 2-methylbutanoic acid, L-lactic acid, D-lactic acid, butanoic acid, etc., and in the pathway of producing flavor substances (His, Met, ethyl hexanoate, etc.) was up-regulated in the inoculated fermentation. Results presented in this study may provide a reference for the development of paocai starters and further guidance for the flavor improvement of Sichuan paocai.

Ilex paraguariensis Extracts: A Source of Bioelements and Biologically Active Compounds for Food Supplements

Ilex paraguariensis, commonly known as yerba mate, is a plant belonging to the holly genus Ilex and the Aquifoliaceae family, indigenous to South America, and is used for the production of yerba mate. Yerba mate is renowned for its abundance of essential nutrients and bioactive compounds. Based on test results, it can be assumed that the selection of raw material for the preparation of extracts as well as the extraction method significantly influence the final content of biologically active compounds in the extracts. Consequently, this variability impacts the ultimate concentration of biologically active substances within the end product, potentially influencing human consumption. The present study aimed to quantify and compare the content of selected biological active compounds in supplements and products containing I. paraguariensis extracts, along with organic yerba mate dried through a smoke-free process, available in the European market (P-1–P-10). The evaluation focused on antioxidant substances such as neochlorogenic acid, chlorogenic acid, cryptochlorogenic acid, 4-feruloylquinic acid, isochlorogenic acid, rutoside astragalin, and caffeine. Additionally, the concentration of specific macro and trace elements was ascertained. The antioxidant compound makeup differs between methanol-extracted samples and aqueous extracts. In both cases, methanol extracts, particularly those in instant and traditional herb forms, showed the highest content of organic compounds with antioxidant properties (such as phenolic compounds and caffeine). The highest content of chlorogenic acid was detected in both methanol (14.7412 mg/g d.w.) and water (8.3120 mg/g d.w.) extracts in product P-4. The caffeic acid content ranged from 0.1491 mg/g d.w. to 1.7938 mg/g d.w. in methanol extracts and from 0.0760 mg/g d.w. to 0.4892 mg/g d.w. in water extracts. The neochlorogenic acid content ranged from 2.6869 to 23.9750 mg/g d.w. in ethanol extracts and from 0.4529 to 10.2299 mg/g d.w. in water extracts. Therefore, the traditional preparation of yerba mate as a water infusion does not fully exploit the raw material’s potential. Among the tested products, only the dietary supplement in capsule form contained protocatechuic acid, which was not present in any other tested products. Conversely, compounds characteristic of yerba mate found in other preparations were absent in this supplement. The caffeine content was also the lowest in this product. The determined content of active substances did not consistently match the declarations made by producers if stated on the packaging.

Wintertime ozone surges: The critical role of alkene ozonolysis

Ozone (O3) pollution is usually linked to warm weather and strong solar radiation, making it uncommon in cold winters. However, an unusual occurrence of four high O3 episode days (with maximum hourly concentrations exceeding 100 ppbv and peaking at 121 ppbv) was recorded in January 2018 in Lanzhou city, China. During these episodes, the average daytime concentration of total non-methane volatile organic compounds (TVOCs) reached 153.4 ± 19.0 ppbv, with alkenes—largely emitted from the local petrochemical industry—comprising 82.3 ± 13.1 ppbv. Here we show a photochemical box model coupled with a Master Chemical Mechanism to elucidate the mechanisms behind this unusual wintertime O3 pollution. We find that the typically low temperatures (−1.7 ± 1.3 °C) and weak solar radiation (263.6 ± 60.7 W m-2) of those winter episode days had a minimal effect on the reactivity of VOCs with OH radicals. Instead, the ozonolysis of alkenes generated Criegee intermediates, which rapidly decomposed into substantial ROx radicals (OH, HO2, and RO2) without sunlight. This radical production led to the oxidation of VOCs, with alkene ozonolysis ultimately contributing to 89.6 ± 8.7% of the O3 formation during these episodes. This mechanism did not activate at night due to the depletion of O3 by the NO titration effect. Furthermore, the findings indicate that a reduction of alkenes by 28.6% or NOx by 27.7% in the early afternoon could significantly mitigate wintertime O3 pollution. Overall, this study unravels the unique mechanism of alkene-induced winter O3 pollution and offers a reference for winter O3 reduction strategies in the petrochemical industrial regions.
