Abstract

The isoelectric point distribution (IEPD) of alkali-processed gelatin has been deter-mined. Adding urea improved the linearity of the pH gradient calibration curve. The relationship between real and apparent isoelectric point (IEP) values has been deduced. The IEP of extracted gelatin increased and the IEPD ranges broadened with successive gelatin extraction runs.
