Abstract

Gas Expanded Liquids (GXL) are mixtures of liquid solvents and gases or supercritical fluids whose thermodynamical properties could be modified enormously by little changes in pressure, temperature and solvent/gas ratio. Moreover, GXL can be considered greener solvents than the pure liquid component in the mixture as demonstrated by several Life Cycle Assesment studies. In this sense, GXL are very good candidates to be employed as extraction solvents of food and other natural products and can be integrated into foodomics analytical platforms. In the present chapter, the physicochemical properties of GXL are addressed along with their implications in green chemistry. Some examples of equipment and applications are outlined applied to the extraction of bioactive compounds.
