Abstract
Cold atmospheric pressure plasma (CAPP) is an emerging nonthermal technology and can be a novel approach for the gentle decontamination of food products and food contact surfaces. This article summarizes basic knowledge on CAPP based microbial inactivation mechanisms and information on CAPP technology for microbial inactivation on different food products and contact surfaces, as well as current limiting factors.
