Abstract
Ultrasound is a well-known technology to develop various effective, efficient, and reliable processing applications in the food industry. Ultrasound is a versatile technology and has been applied efficiently in food processes including extraction, drying, decontamination, mixing and homogenization, emulsification, freezing, thawing, and cutting of food. Some of the advantages of using ultrasound for food processing faster energy and mass transfer, shorter processing times, higher product yields, simpler equipment design, low processing costs and/or maintenance costs, flexibility to combine with other processes, and possibly reduced environmental footprints. This chapter presents current knowledge and application of ultrasound-assisted processes (excluding extraction) in bio-marine sector.
