Abstract

Polysaccharides are macromolecule compounds from vegetable sources. Studies have shown the importance of polysaccharides in nutrition but also in other fields such as cosmetic and pharmaceutical applications. Polysaccharides exhibit numerous biological and pharmaceutical activities, for example, they have immunostimulant effects, act as probiotics, prevent dehydration, increase shelf life, and have antiviral, antiinflammatory, anticancer, anticoagulant, antiallergic, and anticancer activities. In this chapter, different applications of polysaccharides were highlighted and discussed.
