Abstract

The present chapter will give information on chemical contaminants and residues in seafood, particularly finfish. The contamination of finfish by environmental contaminants has received considerable attention with regards to food safety during the last decade. This chapter will concentrate on the environmental contamination of feral and farmed finfish, which can be potentially hazardous to consumers. The two main groups of environmental chemical contaminants, namely metals and persistent organic pollutants (POPs), will be addressed. In addition, emerging non- or semipersistent organic pollutants and metalloids in feral and farmed fish will be discussed. This chapter will also discuss fish feed contamination, carryover of environmental contaminants from feed to fish, and current developments in reducing the POP contamination of farmed fish.
