Abstract

This chapter gives information on chemical contaminants and residues in seafood, and particularly finfish. The contamination of finfish by environmental contaminants has received considerable attention with regard to food safety in the last decade. This chapter will concentrate on the environmental contamination of feral and farmed finfish, which can be potentially hazardous to consumers. The two main groups of environmental chemical contaminants, namely metals and persistent organic pollutants (POPs), will be addressed. This chapter will also discuss fish feed contamination, carry-over of environmental contaminants from feed to fish, and current developments in reducing the POP contamination of farmed fish.
