Abstract
China is the largest potato producer and one of the fastest-growing countries in potato consumption in the world. Potato has become the fourth major staple food in China and is irreplaceable in ensuring food security. This chapter discusses the history and current situation of potato production in China and analyzes the current situation of potato production technology in China. Against the problems existing in potato production, this chapter puts forward the concrete countermeasures to promote the development of potato production in China.
