Abstract

The world annual agricultural by-product volumes are continuously increasing due to increased food production requirements. Therefore, in the past few decades, research has focused on developing novel value-added applications for agricultural and food industry by-products. Coincidently, the interest on bioactive compounds and their health implications has also increased over the past few decades due to increased aging population in the world. Many studies conducted in recent history indicate the presence of several bioactive compounds in agricultural by-products, that can be used in functional food and nutraceutical development. Bioactive proteins and peptides, phenolic compounds and other phytochemicals, dietary fibre, bioactive lipids, and bioactive polysaccharides are some of the prime examples of bioactive compounds that can be extracted from agricultural by-products that exhibit human health benifits. This chapter will summarize the recent developments and research conducted on the various bioactive compounds present in the agricultural by-products and their biological activities and human health implications.
