Abstract

Agricultural practices and the food industry produce significant amounts of waste and by-products, which are rich sources of various bioactive components including phenolic compounds, dietary fibers, amino acids, fatty acids, probiotics, and other biochemicals such as vitamins, minerals and carotenoids, and other phytochemicals. These biomolecules and biochemicals have several preventative beneficial effects against various health ailments and disorders. Popularity of functional beverages with valuable health effects has increased recently. Wastes and by-products obtained from the agri-food industry can be an inexpensive source of bioactive compounds for their use in functional beverages, which will also lead to the economical production processes enhancing the affordability of these beverages and create new job opportunities, simultaneously decreasing the environmental pollution caused by the agri-food sector. This chapter summarizes the various bioactive compounds extracted from agricultural and food industry by-products; the methods widely applied for their extraction and application; the sensory and functional characteristics of their resulting products; the respective modifications applied for their wider acceptance; and the challenges and future considerations of the industrial application of these bio-sourced chemicals.
