Effect of cinnamon powder on quality attributes and off-flavor in fried chicken drumsticks made from long-term thawed Korean native chicken

The effect of cinnamon powder on the quality and mitigation of off-flavor in fried chicken drumsticks made from long-term thawed Korean native chicken (Woorimatdag No. 1, WRMD1) was investigated. The WRMD1 drumsticks were categorized into 5 groups: conventional thawing (16 h, CT), long-term thawing (48 h, LT), cinnamon powder added into 'LT' as marinade (0.03%, CM) or incorporated into the batter (1.35%, CB), and long-term thawing with cinnamon powder incorporated both in the marinade and batter (0.03% + 1.35%, CMB). The crude fat content was significantly higher in the CT and CMB than that of the CB. The CM, CB, and CMB showed significantly lower levels of 2-thiobarbituric acid reactive substance compared with the CT and LT. The predominant fatty acids in all treatments were C18:1n9, C18:2n6, and C16:0. The LT displayed lower total unsaturated fatty acid content than the CT (P < 0.05). The CM effectively decreased lipid oxidative volatiles, such as 1-octanol, 1-octen-3-ol, and 2-octen-1-ol, (E), in the LT (P < 0.05). Both the CM and CB showed an inclination to increase specific pyrazines associated with pleasant notes compared with the LT, and showed higher levels of pyrazines, such as pyrazine, 2-ethyl-6-methyl-, and pyrazine, 3-ethyl-2,5-dimethyl-, than those of the CMB (P < 0.05). The CM contained higher levels of 2,3-butanedione when compared with the other groups (P < 0.05). Multivariate analysis demonstrated that cinnamon had an effect in discriminating the treatment groups with cinnamon addition from both the CT and LT, whereas the CM, CB, and CMB formed distinct clusters. The CM and CMB received significantly higher aroma scores from panelists in comparison to the other groups. These findings suggest that the CM (0.03% cinnamon powder) can be used to enhance the aroma in fried WRMD1 drumsticks by reducing or masking the off-flavor volatiles associated with long-term thawing.

Phytochemical profile of secondary metabolites in the phloem of mature Pinus pinaster trees attacked by the pine wood nematode

The present study highlights, for the first time, the chemical composition of secondary metabolites (lipophilic and hydrophilic compounds) present in the phloem tissues of infected mature Pinus pinaster Ait. trees (on average 74 years old), which may be potentially determinant in the development of the pine wood nematode (PWN) Bursaphelenchus xylophilus. The levels of secondary metabolites in the phloem of infected trees were fairly constant along the height of the trees (an average of 30% dry phloem), but slightly lower compared with total extractives content in the phloem of mature healthy P. pinaster trees (30.0 vs. 39.9%). The hydrophilic fraction represented 91% of the total soluble compounds (27.3% of phloem mass) and it was mainly composed of phenolic compounds and reducing sugars (44.8% and 58.8% of the ethanol-water extracts). The lipophilic fraction (2.7% of phloem mass), was dominated by tricyclic diterpenic compounds (54.2–63.2% of the total lipophilic extracts) and fatty acids. Differences in the relative concentrations of individual compounds were observed compared to healthy pines, suggesting a response to the biotic stress imposed by nematode damage by an increased content of diterpenic resin acids, specifically dehydroabietic and abietic acids, and of total unsaturated fatty acids with a predominance of 9-octadecenoic acid.

Effect of Different Edible Trichosanthes Germplasm on Its Seed Oil to Enhance Antioxidant and Anti-Aging Activity in Caenorhabditis elegans

The seeds of various Trichosanthes L. plants have been frequently used as snacks instead of for traditional medicinal purposes in China. However, there is still a need to identify the species based on seeds from Trichosanthes germplasm for the potential biological activities of their seed oil. In this study, 18 edible Trichosanthes germplasm from three species were identified and distinguished at a species level using a combination of seed morphological and microscopic characteristics and nrDNA-ITS sequences. Seed oil from the edible Trichosanthes germplasm significantly enhanced oxidative stress tolerance, extended lifespan, delayed aging, and improved healthspan in Caenorhabditis elegans. The antioxidant activity of the seed oil exhibits a significant positive correlation with its total unsaturated fatty acid content among the 18 edible Trichosanthes germplasm, suggesting a genetic basis for this trait. The biological activities of seed oil varied among species, with T. kirilowii Maxim. and T. rosthornii Harms showing stronger effects than T. laceribractea Hayata.

Functional Evaluation of Fermented Rice Bran and Extracted Rice Bran Oil Addressing for Human Health Benefit.

Rice bran (RB) and rice bran oil (RBO) are exploring as prominent food component worldwide and their compositional variation is being varied among the world due to regional and production process. In this study, Fermented Rice Bran (FRB) was produced by employing edible gram-positive bacteria (Lactobacillus acidophilus, Lactobacillus bulgaricus and Bifidobacterium bifidum) at 125×10 5 spore g -1 of rice bran, and investigated to evaluate nutritional quality. The Crude Rice Bran Oil (CRBO) was extracted from RB and its quality was also investigated compared to market available rice bran oil (MRBO) in Bangladesh. We found that fermentation of rice bran with lactic acid bacteria increased total proteins (29.52%), fat (5.38%), ash (48.47%), crude fiber (38.96%), and moisture (61.04%) and reduced the carbohydrate content (36.61%). We also found that essential amino acids (Threonine, valine, leucine, lysine, histidine and phenylalanine) and non-essential amino acids (alanine, aspartate, glycine, glutamine, serine and tyrosine) were increased in FRB except methionine and proline. Moreover, total phenolic content, tannin content, flavonoid content and antioxidant activity were increased in FRB. The RBO analysis showed that γ-oryzanol content (10.00 mg/g) were found in CRBO compared to MRBO (ranging 7.40 to 12.70 mg/g) and Vitamin-E content 0.20% were found higher in CRBO compared to MRBO (ranging 0.097 to 0.12%). The total saturated (25.16%) and total unsaturated fatty acids (74.44%) were found in CRBO whereas MRBO contained total saturated (22.08 to 24.13%) and total unsaturated fatty acids (71.91 to 83.29%) respectively. The physiochemical parameters (density, refractive index, iodine value) were found satisfactory in all sample except acid value and peroxide value higher in CRBO. Heavy metal concentration was found within an acceptable range in both CRBO and MRBO. Thus FRB and RBO could be value added food supplement for human health.

Effect of Nutmeg Meal on Microbial Abundance of Biohydrogenation Process, and Fatty Acid Profile of Goat Rumen Fluid In Vitro

This study aimed to evaluate the effect of nutmeg meal as a source of phenol on the abundance of dominant microbes in the biohydrogenation process and the fatty acid profile of goat rumen fluid in vitro. This study used a randomized complete block design with four treatments and three replicates of in vitro batches, each replicate in duplicate. The dietary treatments consisted of elephant grass (40%), soybean meal (10%), with varying proportion of wheat pollard, canola oil and nutmeg meal hence, treatment P0 (40:10:45:5:0); P1 (40:10:40:5:5); P2 (40:10:35:5:15); P3 (40:10:30:5:10). Fermentation using the in vitro gas production method described by Menke and Steinggas with an incubation period of 48 hours. Parameters observed included microbial abundance and fatty acid profile of goat rumen fluid. The statistical analysis showed that adding nutmeg meal starting at the 5% level decreased the abundance of the main biohydrogenation process bacteria anaerovibrio, butyrivibrio fibrisolvens, and pseudobutyrivibrio. Total saturated fatty acid and stearate fatty acid concentrations decreased (P&lt;0.05), while total unsaturated fatty acid, linoleic and oleic acid concentrations increased (P&lt;0.05).

Potential of Paulownia Leaves Silage in Lamb Diet to Improve Ruminal Fermentation and Fatty Acid Profile − An in vitro Study

Abstract Environmental impact, quality, and quantity of food products of ruminant origin (especially beef and mutton) are considered major challenges in meeting the nutritional requirements of the growing human population worldwide. Therefore, we conducted this in vitro study to explore the potential of Paulownia leaves silage to reduce the environmental impact of feedlot lamb production and improve ruminal fatty acids (FAs) profile by influencing ruminal biohydrogenation. In the present study, Paulownia leaves silage (PLS) and alfalfa silage (AAS) were mixed in a proportion of 1:0 (Control, PLS 0%), 0.75:0.25 (PLS 25%), 0.5:0.5 (PLS 50%), 0.25:0.75 (PLS 75%) and 0:1 (PLS 100%) on dry matter basis in the lamb diet. The experimental findings demonstrated that 100% replacement of AAS with PLS in the lamb diet significantly improved the ruminal fermentation by increasing the in vitro DM degradability (P&lt;0.01), total volatile fatty acid (P&lt;0.01), and propionate production (P&lt;0.01) while reducing the acetate: propionate (A/P) ratio (P&lt;0.01) and CH4 concentration (mM; L and Q P&lt;0.05) and CH4 production, mM/g DM (L and Q P&lt;0.05). Meanwhile, 100% PLS inclusion in the diet increased the total monounsaturated fatty acids (P&lt;0.05), total unsaturated fatty acids (P&lt;0.01) and total n-3 fatty acids (P&lt;0.05) particularly alpha-linolenic acid (ALA; C18:3 n-3; P&lt;0.05) in the rumen fluid after incubation. Moreover, the total saturated fatty acids concentration was reduced (P&lt;0.01). These findings suggested that PLS could be a climate-friendly and sustainable alternative to AAS in the lamb feedlot diet for quality meat production.

Effects of different dietary lipid levels on physiological metabolism and odor quality of hepatopancreas in adult female Chinese mitten crab (Eriocheir sinensis)

Abstract Objectives This study aimed to investigate the impact of different dietary lipid levels on the physiological metabolism and odor quality of adult female Eriocheir sinensis during the fattening phase. Materials and Methods Five dietary schemes, each containing different total lipid levels (4%, 7%, 10%, 13%, and 16%), were administered over a 60-d fattening period for adult female crab (approximately 50 g, n=60). Chromatography and spectroscopy techniques were used for the detection of aroma and key aroma precursors. Results Dietary lipids had no significant effect on growth performance and hepatopancreas index (P&amp;lt;0.05). The carotenoid content showed an increasing and then decreasing trend, with a significant increase to 1312.51 mg/kg (P&amp;lt;0.05) at 7% lipid content of the diet. In contrast, a diet with a 13% lipid level led to a significant increase in total unsaturated fatty acids (115.3 mg/g, P&amp;lt;0.05), which maximized the contents of major fatty acids (oleic, linoleic, and linolenic, among others), and presented a fluctuating trend. A diet with higher lipid levels (16%) inhibited fatty acid accumulation. Moreover, a 13% dietary lipid level enhanced characteristic aroma compounds (for example, nonanal, octanal, hexanal, 3-methylbutanal, and 2-heptanone) in E. sinensis cooked hepatopancreas. Through an orthogonal partial least squares discriminant analysis model, it becomes evident that lipids and carotenoids together promote aroma formation in hepatopancreas. Conclusions Based on the current findings, the optimal dietary lipid level for enhancing the odor quality of hepatopancreas in adult female E. sinensis during the fattening phase was 13%. This study provides more precise options for the high-quality cultivation of E. sinensis.

The fatty acid profile and the quality of breast and leg muscles in female and male pearl gray guinea fowl (Numida meleagris)

The aim of this study was to evaluate the fatty acid (FA) profile and the quality of breast and leg muscles in male and female guinea fowl. In comparison with leg muscles, breast muscles had a higher content of dry matter and total protein, and contained less fat and total collagen (P ≤ 0.05). Sex had no effect on the chemical composition of the studied muscles or the FA profile of intramuscular fat (IMF) (P > 0.05). The IMF of breast muscles was characterized by higher proportions of total saturated fatty acids (SFAs) and polyunsaturated fatty acids (PUFAs), and lower proportions of total unsaturated fatty acids (UFAs) and monounsaturated fatty acids (MUFAs) (P ≤ 0.05) than the IMF of leg muscles. The physicochemical properties of guinea fowl meat were significantly influenced by muscle type (P ≤ 0.05), but not by sex (P > 0.05). Leg muscles were characterized by a higher pH, higher cooking loss, lower lightness (L*), lower drip loss, a higher contribution of redness (a*), and a lower contribution of yellowness (b*) than breast muscles (P ≤ 0.05). The experimental factors had no effect on the sensory attributes or the shear force values of the analyzed muscles (P > 0.05). The unique sensory attributes, high protein content, and low fat content of the analyzed muscles indicate that guinea fowl meat can be a dietary supplement and an addition to other types of meat consumed, especially that most guinea fowl are reared in extensive farming systems that contribute to sustainable food production.

The Fatty Acid Profile, and the Content of Vitamin A, Vitamin E and Cholesterol in Beef (M. longissimus lumborum) Stored Under Different Modified Atmospheres

Abstract The aim of this study was to analyze the fatty acid profile of intramuscular fat and the content of vitamin A, vitamin E and cholesterol in samples of the longissimus lumborum (LL) beef muscles and stored for 7, 14 and 21 days under modified atmospheres (MA): vacuum, 80% O2 + 20% CO2, 60% O2 + 30% CO2 + 10% N2, 40% CO2 + 60% N2, 30% CO2 + 70% Ar). The experimental factors, i.e., storage time (ST) and MA composition, had no significant effect on the proportions of individual saturated fatty acids (SFAs), but they significantly modified the proportions of individual unsaturated fatty acids (UFAs) and the fatty acid profile of intramuscular fat (IMF). The study demonstrated that in order to minimize the loss of total UFAs, samples of the LL muscle should be cold-stored in MA 40% CO2 + 60% N2 for up to 14 days; MA 30% CO2 + 70% Ar also effectively prevented the loss of total PUFAs and eicosapentaenoic acid (EPA). The losses of vitamins A and E were lowest when beef was packaged under oxygen-free MA, in particular MA 30% CO2 + 70% Ar. Prolonged storage (21 days) did not contribute to significant vitamin losses, but it induced a decrease in cholesterol concentration, which was lower in vacuum-packaged samples than in those packaged in MA containing 60% O2 and MA composed of 40% CO2 + 60% N2.

Characterization of Agronomic and Seed Oil Features for Different Cultivars of Tree Peony.

Tree peony is a unique oil plant resource in China, and tree peony seed oil is one of the healthy edible oils with a very promising future. However, the main oil tree peony cultivars promoted in China are Paeonia ostii 'Fengdan' and Paeonia rockii. In order to explore new oil tree peony cultivars, 68 tree peony cultivars were investigated and cultivars with oil potential were selected by cluster analysis and grey relational analysis (GRA) in this study. The results demonstrated that the 68 cultivars varied significantly in terms of agronomic characteristics (p < 0.05), with the coefficient of variation in seed yield per plant reaching a high of 75.36%. The oil content of 46 cultivars was higher than 'Fengdan' (20.87 ± 0.26%) and 'Zibanbai' (21.24 ± 1.01%), while the alpha-linolenic acids and total unsaturated fatty acid contents of 26 cultivars were higher than 'Fengdan' (39.79 ± 1.13% and 88.99 ± 0.47%) and 'Zibanbai' (40.51 ± 0.09% and 93.59 ± 0.09%). Finally, three cultivars with better integrated traits were selected by cluster analysis and grey relational analysis (GRA), comprising of 'Changshoule', 'Xianchizhenghui', and 'Yupantuojin'. The contents of alpha-linolenic acids and total unsaturated fatty acids in 'Changshoule' (47.98 ± 0.17% and 93.60 ± 0.08%), 'Xianchizhenghui' (49.44 ± 0.63% and 93.80 ± 0.06%), and 'Yupantuojin' (40.46 ± 0.26% and 93.58 ± 0.06%) were higher than that of 'Fengdan' (39.79 ± 1.13% and 88.99 ± 0.47%). In general, these cultivars can be used as hybrid parental materials for breeding new excellent oil tree peony cultivars.

Proton transverse relaxation times depending on the unsaturated fatty acids: a magnetic resonance relaxometric study on beef fat samples

ABSTRACT The unsaturated fatty acid content of beef meat is an important property that affects the health and sense of taste of the consumer and determines price. Fresh beef fat samples were measured by a bilateral low-field time-domain proton magnetic resonance (MR) apparatus. The proton transverse relaxation time (T2) for 18 fat samples were measured at 40.0°C using the Carr-Purcell-Meiboom-Gill method. The results showed that T2 increased linearly with unsaturated fatty acid content. By using the linear dependence of T2 on the unsaturated fatty acid content, we successfully estimated the contents of oleic acid, total monounsaturated fatty acid, and total unsaturated fatty acid with root-mean-square errors of 2.5, 2.8, and 3.2 wt%, respectively. The proposed T2-relaxometry-based method could be performed using a portable unilateral MR surface scanner, which would enable in-vivo nondestructive noninvasive measurements of live cattle for the optimization of the feeding and fattening timing from calf to adult and for the best choice of the shipment timing in terms of the maximization of unsaturated fatty acid content of beef meat.

Investigation on the Microbiological Quality and Fatty Acid Methyl Esters Composition of Commercially Available Cold-pressed Nigella sativa L. Oil

Background:: Nigella sativa is a traditional plant with several ethno-medicinal activities. There have been several health advantages associated with Nigella sativa (Ns) L. oil, which has a high concentration of bioactive compounds. Method:: This research aimed to examine the fatty acid methyl ester profiles, microbiological profiles, and aflatoxin profiles of cold-pressed Ns oils acquired from Turkish herbalists. For this, the fatty acids methyl esters (FAMEs) content and microbiological purity of 10 different Ns oils were examined. Results:: The principal FAME components in Ns seed oils were linoleic (C18:2), oleic (C18:1), and palmitic acid (C16:0), with relative percentages of 34.17-57.54%, 19.41-30.52%, and 7.05-12.54%, respectively. The quantity of total saturated fatty acids (SFA) in all investigated oils ranged from 11.47 to 18.69%, while the amount of total unsaturated fatty acids ranged from 80.94 to 88.53%. Six of ten products (0.35-1.49%) were found to contain cis-11 eicosenoic acid, a chemical unique to Ns oil. Conclusion:: Although no Aflatoxin was found in any of the samples, Enterobacteriaceae levels were exceptionally low, and yeast mold concentrations surpassed the Turkish Food Codex's permissible limit values.

BENEFITS OF MICROBIAL FERTILIZERS APPLIED AT DIFFERENT GROWTH STAGES ON OIL CONTENT AND QUALITY PROPERTIES OF PEANUT

Microbial fertilizer helps the plants grow healthy and stay strong due to including fertilizer and beneficial microorganisms. The purpose of the study was to determine the effects of microbial fertilizers applied in different growth stages on oil content, fatty acid composition and oil quality of peanut (Arachis hypogaea L.). The study was conducted in Osmaniye/Turkey in 2019 and 2020 according to RCBD arranged in split-plots design with 3 replications. The highest oil contents were observed in 150 cc da-1 (53.07%) and beginning bloom + full bloom (53.95%) treatments in studied years. For total unsaturated fatty acid compositions, the highest values were obtained in full bloom (79.49%) and 100 cc da-1 (79.99%) treatments. The highest O/L ratio were observed in full bloom and 100 cc da-1 treatments as 1.72 and 1.68, respectively according to mean of 2-year values. Similar results were seen in IV, and these treatments came forefront with the values 93.83 and 94.52, respectively. As a results of the study, it was concluded that (i) microbial fertilizers had the positive effects on oil content and quality parameters of peanut, (ii) the treatment 100 cc da-1 applied in full bloom may be the optimum selection.

Harnessing sponge gourd: an alternative source of oil and protein for nutritional security.

Luffa cylindrica (L.) Roem. is an important cucurbit crop that assures food security and dietary diversity among the poor communities. In the present study, seeds of 42 genotypes of Luffa cylindrica were evaluated for their potential use as oil seed crop. Seed moisture, oil and protein content and fatty acids profile were estimated along with total phenol and sugar content. Significant differences were observed among the various genotypes where oil content ranged from 15.4-29.8% and protein 19.9-30.8%. Total phenol content was high 6.43-12.84 mg/100 g, which bodes well for the sponge gourd seeds' ability to act as antioxidants. Significant correlation were found between important constituents studied like protein and oil, palmitic acid, stearic acid and oleic acid. Total unsaturated fatty acids were in higher amount comparable to saturated fatty acids signifying the good quality of Luffa seed oil. Our research revealed that the NDSG-1, Pusa Sneha, DSG-95, DSG-98, DSG-108, and DSG-26 genotypes were very nutritious due to their high levels of protein, oleic acid, and oil output. Additionally, selection of traits having considerable correlation will be beneficial and help in improved varietal development for usage as an alternative oilseed crop. Our research sheds light on the nutritional value of sponge gourd seeds and suggests using them as a potential source for oil and protein, particularly in underdeveloped countries.

Impatto degli antiossidanti sulla qualità e la stabilità ossidativa dei grassi animali

The aim of the work was to determine the influence of natural and synthetic antioxidants on the quality and stability of animal fats. On the samples, with and without the addition of natural antioxidants (extract of sage, rosemary and ginger) added in the fats at a concentracion of 0.2 % and synthetic antioxidants (PG-propyl galate, BHA-butylhydroxyanisole and BHT-butylhidroxytoluene) added in the fats at a concentracion 0.01 % the values of the peroxide value and the content of free fatty acids were tested. The oxidative stability of fats was determined by the sustainability test at 98 °C during 7 days. Every 24 hours, the peroxide value and free fatty acids were examinedid for all samples of beef, sheep and goat fat. The results of the research show that the applied antioxidants successfully stabilized all animal fats compared to the control sample. Analysis of the composition of fatty acids of base samples (without the addition of natural antioxidants) shows that palmitic, stearic and oleic fatty acids are the most abundant in animal fats. The highest total SFA value was found in sheep fat (66.85 %), and the lowest in goat fat (56.57 %). In beef fat, the total SFA content was 59.26 %. Stearic acid is the most abundant in sheep fat (37.75 %), while beef and goat fat had lower and approximately equal values (27.93 % and 26.91 %). After staeric fat, palmitic fat is the mostabundant in beef fat with 27.78 %, followed by 25.25 % in sheep fat and 24.91 % in goat fat. Of the monounsaturated acids (MUFA), the most abundant in goat fat was oleic acid (38.16 %), while it was somewhat lower in beef (36.61 %), and the lowest in sheep (27.60 %). Total unsaturated fatty acids (UFA) are most abundant in goat fat (43.51 %), followed by beef (40.82 %), while they are significantly less present in sheep's fat (32.95 %). Among polyunsaturated acids (PUFA), the highest content of linoleic acid was found in sheep fat (4.19 %). In beef fat, linoleic acid was 60 % lower compared to sheep fat (0.76 %), and 10% higher compared to goat fat (1.89 %). Based on the content of individual fatty acids and the content of certain groups of fatty acids: SFA, UFA, MUFA, PUFA, the nutritional indices of the tested fats were calculated. It was concluded that the tested samples of beef, sheep, and goat fat without the addition of antioxidants can not be declared as products of high nutritional value. The nutritional value expressed through the PUFA/SFA ratio for beef fat was 0,01, and sheep fat and goat fat 0.06.

Distinct Effects of Seed Coat and Flower Colors on Metabolite Contents and Antioxidant Activities in Safflower Seeds.

Safflower is an important oilseed crop cultivated primarily for its seeds, which have pharmaceutical properties. Color is an important agronomical trait that appears to be a prior parameter for evaluating the internal quality of plant seeds. This study employs 197 safflower accessions seeds to analyze how their seed coat and flower colors affect their total oil content, fatty acid composition, total phenolic content (TPC), N-(p-coumaroyl)serotonin (CS) and N-feruloylserotonin (FS) contents, and [2,2-diphenyl-1-picrylhydrazyl (DPPH) and 2,2'-azino-bis-(3-ethylbenzothiazoline-6-sulfonic acid) (ABTS)] radical scavenging activities. Significant variations were observed in the targeted metabolite contents and antioxidant properties among genotypes. Notably, the linoleic acid content, total unsaturated fatty acid content, the ratio of total unsaturated fatty acid to total saturated fatty acid, CS, FS, ABTS, and DPPH scavenging capacities varied significantly based on seed coat color, with white-seeded genotypes having the highest average values of these parameters. Moreover, the linoleic acid content differed significantly (p < 0.05) among the genotypes with varying flower colors, with white-flowered accessions having the highest average content. Furthermore, genotypes K185105 (No. 75) and K175278 (No. 146) were identified as promising genetic resources with health benefits. Overall, these findings reveal that seed coat and flower colors distinctly affect metabolite contents and antioxidant properties in safflower seeds.

The objectives of this study were to prepare and characterize two different salad dressings based on cold-pressed safflower oil. Common physico-chemical and thermal properties, compositions, sensory descriptive analysis, and consumer tests were completed. Both samples had acceptable free fatty acidity, peroxide and pH values, and had color values reflecting the spices (red pepper and green spices). Both dressings were liquid at around -14 to -19 oC and were pourable. They were good sources of essential fatty acids, including around 91-92% of total unsaturated fatty acids. Total phytosterol contents were around 1693-1700 mg/kg, with a majority of β-sitosterol. Further, both samples had around 284 mg/kg of total tocopherols. The panel used 8 sensory terms (consistency, sweet, salty, sour, bitter, spicy, vinegary, and metallic) to describe the samples. Consumers liked their appearance and smell/aroma, but taste/flavor and general acceptance scores were lower. Further studies to improve taste properties are suggested.

Effect of Buffalo Breed on the Detailed Milk Composition in Guangxi, China.

Buffalo is the second source of milk in the world, and its milk is rich in nutritive components. It is well-known that breed influences milk composition. This work aimed to compare the detailed milk composition of three buffalo breeds (Murrah, Nili-Ravi, and Mediterranean) housed under the same environmental conditions. Mediterranean buffalo milk showed a significantly higher content of fat, protein, and some fatty acids. Moreover, the milk from the Mediterranean breed was characterized by the highest content of sphingomyelin (SM), cholesterol, and lanosterol. However, the Murrah buffalo milk contained the highest amount of total unsaturated fatty acids, phosphatidylinositol, and whey proteins. Furthermore, the Nili-Ravi buffalo milk was characterized by the highest content of total saturated fatty acids, phosphatidylglycerol, squalene, lathosterol, stigmasterol, beta-sitosterol, and casein fractions. Nevertheless, the lactose and amino acid profiles of the milk remained almost similar across the three buffalo breeds. The generated results in this study enable a comprehensive understanding of the milk constituent variability that is linked to buffalo breeds, which may support the acquirement of essential scientific knowledge on milk ingredient-processing interactions that will offer a foundation of knowledge for Chinese dairy processors in terms of milk processability and innovation.

A Comparative Study on the Carcass and Meat Chemical Composition, and Lipid-Metabolism-Related Gene Expression in Korean Hanwoo and Brindle Chikso Cattle.

The objective of this study was to elucidate the effect of cattle breed on carcass and meat chemical composition, fatty acid profiles, and lipid-metabolism-related genes. For this study, same-age Hanwoo and Chikso steers (n = 6 per breed) reared under identical conditions were used. Immediately after slaughter, muscle tissues were collected for analysis of mRNA expression. At 24 h post-mortem, the carcasses were assessed for carcass traits (marbling score, meat yield, etc.), and meat quality and fatty acid profiles in the longissimus lumborum (LL) and semimembranosus (SM) muscles. The results showed that no differences in the slaughter weight, dressing rate, back-fat thickness, trimmed fat, and total meat yield occurred between the two breeds (p > 0.05). However, Hanwoo cattle had a higher marbling score, intramuscular fat (IMF) content, and expression level of lipid-metabolism-related genes such as lipoprotein lipase, peroxisome proliferator-activated receptor gamma, and fatty acid binding protein 4, compared with Chikso (p < 0.05). Contrastingly, Chikso had a higher total unsaturated fatty acid content and expression level of stearoyl CoA desaturase 1 (p < 0.05). It may be said that the difference in the expression levels of lipid-metabolism-related genes could be the molecular factors underlying IMF deposition and fatty acid profile differences in the beef from the two breeds.

The evaluation of the genotype and slaughter weight effect on meat quality and fatty acid profile from two native sheep.

The purpose of this study is to investigate the quality characteristics and fatty acid composition of meat from male Akkaraman (AKK) and Bafra × Akkaraman B1 (BA B1) lambs slaughtered at different live weights. Thirty-six male lambs (18 AKK and 18 BA B1) were slaughtered at three different slaughter weights (35, 40, and 45kg) after being fattened intensively. Meat physical quality characteristics and fatty acid profiles were used as response variables. Color parameters (L*, a*, and b*) and pH were not significantly influenced by genotype and slaughter weight (SW). Water-holding capacity (WHC) was significantly affected by SW (P < 0.05), cooking loss (CL) by genotype (P < 0.001). Increasing SW, intramuscular fat of the Longissimus thoracis muscle showed increased total unsaturated fatty acids (TUFA) (P < 0.01) and ratios of TUFA/saturated fatty acids (SFA) (P < 0.01), and decreased thrombogenic and atherogenic indices (P < 0.01). Monounsaturated fatty acids (MUFA) (P < 0.05) and polyunsaturated fatty acids (PUFA) (P < 0.01) varied on with the genotypes. In conclusion, genotype and SW did not greatly affect meat quality; however, MUFA and PUFA mutually changed according to the genotype, and fatty acid percentages improved according to the SW.
