The feasibility of preparing high internal phase Pickering emulsions (HIPPEs) from arginine (Arg) and tilapia myofibrillar protein (MP) complex particles for 3D printing was investigated. The characterization of Arg-MP solutions showed that the Arg-MP complexes had excellent emulsification potential. HIPPE stabilized by Arg-MP had a strong self-supporting and stable gel structure. Therefore, HIPPE stabilized by Arg-MP showed excellent stability. Furthermore, the viscoelasticity and thixotropic recovery of the Arg-MP-stabilized HIPPEs increased with increasing Arg concentrations. This made them suitable for 3D printing. Notably, the Arg-MP stabilized HIPPEs exhibited the best printing precision shape, resolution, and clear contours in 3D printing at an Arg concentration of 0.5 wt%. Our results provide a valuable source of food-grade materials for 3D printing inks and demonstrate a promising strategy for deep processing of tilapia myofibrillar protein.
