To establish a preventive measures against excessive intake of salt, sensation of saltiness was investigated for residents in Nagoya city and its vicinity. The result was statistically treated using chai-square test and the following conclusions were obtained.1) The higher the concentration of the soup stock, the more intensely the saltiness is felt.2) Comparison between the sexes revealed that females preferred less salty taste.3) Comparison among different age groups indicated that the young males preferred salty taste.4) As for the relation between the health condition and the sensitivity to saltiness, healthy subjects were more sensitive.5) As for the relation between the degree of hunger and the sensitivity, males were more sensitive to saltiness when they were suitably hungry. The sensititivity of females are hardly influenced by the degree of hunger.
