The biochemical characteristics of pink tomato fruits (<i>Solanum lycopersicum</i> L.): mature and after storage

Relevance. Tomato pink-fruit cultivars and hybrids are of interest for fresh consumption. The biochemical parameters are influenced by the varietal factor and by the growing conditions. It is known that mature tomatoes record low storability. The softening of the fruit is caused by ethylene produced in the ripening fruit. Then pectinase enzymes are synthesized in the fruit tissues, under the action of which the cell walls of the fruit soften. Breeders are creating tomato cultivars whose fruits could be stored for a long time without losing their tasty. The aim of the investigation was to study the biochemical parameters of pink-colored tomato fruits under different ripening conditions. Materials and methods. The plants were grown on the experimental fields of the Laboratory for Breeding and Seed Production of Solanaceae crops. In the Analytical Department, the biochemical composition of pink tomato fruits was studied during harvesting from the field and after laying for storage in the milky ripeness phase according to the following indicators: dry matter, ascorbic acid, total content of water-soluble antioxidants, titratable acidity, monosaccharides, polyphenols and carotenoids. Results. The breeding accession F4 (Lotos x Z6) showed maximum dry matter and monosaccharide content both after storage and in mature fruits. The same sample as F5 (Lotos x Z6) showed the highest ascorbic acid content after storage. Other parameters before and after storage in these samples were comparable. Whereas, breeding accession F6 (Z6 x Lotos) stood out in terms of maximum content of sum of antioxidants in alcoholic extract and content of water-soluble antioxidants after storage.

Research of the antioxidants content in plant raw materials – ingredients for polycomponent functional chips

The article discusses the possibility of using such plant raw materials as pumpkin varieties of Michurinskaya, Krasnaya Malyshka and hybrid Azhur medoviy F1, calendula flower powder, corn flour when designing new types of multicomponent chips ensuring the principle of resource saving due to the involvement of apple production pomace in the technological process juice. A comprehensive analysis of plant raw materials used in the production of chips was carried out for the total content of antioxidants, polyphenolic composition (flavonols, catechins, anthocyanins), the presence of ascorbic acid and beta-carotene. Among the varieties and hybrids of pumpkin, in terms of the total content of water-soluble antioxidants, Krasnaya Malyshka and Azhur Medoviy F1 stand out, then apple pomace, corn flour are ranked in increasing antioxidant value, and the leader here is calendula flower powder. The content of polyphenols in the hybrid Azhur medoviy F1 is higher than in the varieties of Michurinskaya and Krasnaya Malyshka by an average of 42%. The maximum content of ascorbic acid was found in Krasnaya Malyshka pumpkin, but at the same time this variety is inferior in beta-carotene content to two other varieties Michurinskaya and the hybrid Azhur medoviy F1 by 58 and 54%, respectively. Apple pomace can act as an additional source of ascorbic acid and flavonols, calendula flower powder – ascorbic acid, polyphenols and beta-carotene, and corn flour – flavonols, catechins and beta-carotene. All pumpkin varieties and hybrids studied in the work ensure that the finished multicomponent chips, taking into account the established recommended consumption rate – 30 g per day, contain functional ingredients – ascorbic acid, beta-carotene and flavonols at a level of more than 15% of the physiological consumption rate per day.

Exploring the Antioxidant Potential of Blackberry and Raspberry Leaves: Phytochemical Analysis, Scavenging Activity, and In Vitro Polyphenol Bioaccessibility.

The goal of this research was nutritional evaluation through the phytochemical analysis of blackberry and raspberry leaves, the screening of their biological activity (antioxidant capacity and inhibition of lipid peroxidation), and the investigation of the effect of in vitro gastrointestinal digestion (GID) of blackberry and raspberry leaves on the bioaccessibility of polyphenol subclasses. The concentrations of the analyzed liposoluble antioxidants were higher (p < 0.05) in blackberry leaves compared to raspberry leaves, while a significant (p < 0.05) higher content of water-soluble antioxidants was registered in raspberry leaves (with a total polyphenol content of 26.2 mg GAE/g DW of which flavonoids accounted for 10.6 mg/g DW). Blackberry leaves had the highest antioxidant capacity inhibition of the superoxide radicals (O2•-), while raspberry leaves registered the highest inhibition of hydroxyl radicals (•OH), suggesting a high biological potency in scavenging-free radicals under in vitro systems. The maximum inhibition percentage of lipid peroxidation was obtained for blackberry leaves (24.86% compared to 4.37% in raspberry leaves), suggesting its potential to limit oxidative reactions. Simulated in vitro digestion showed that hydroxybenzoic acids registered the highest bioaccessibility index in the intestinal phase of both types of leaves, with gallic acid being one of the most bioaccessible phenolics. The outcomes of this investigation reveal that the most significant release of phenolic compounds from blackberry and raspberry leaves occurs either during or after the gastric phase. Knowledge about the bioaccessibility and stability of polyphenol compounds during digestion can provide significant insights into the bioavailability of these molecules and the possible effectiveness of plant metabolites for human health.

Some aspects of antioxidant protection in the body of young cattle

Relevance. Of scientific interest are studies to assess the pro- and antioxidant status of the body of productive animals with age, since they are interconnected with health, the state of the immune and reproductive systems.Methods. In order to study the indicators of antioxidant protection in the body of young cattle of different ages in the conditions of the PZ «Ladozhsky» (Krasnodar district), the following groups of animals were formed in the winter period of 2022: young animals at the age of 1 month (n = 15), 3–4 months (n = 19), young animals 6–7 months old (n = 14), heifers (n = 16). The following indicators were determined in the blood of the studied animals: the concentration of ceruloplasmin (CP), products reacting with thiobarbituric acid (TBA-AP), the total content of water-soluble antioxidants (TAWSA), the total antioxidant status (TAS), peroxidase activity, the ratio of TBA-AP/CP, metabolic processes and hematological indicators were calculated. Correlations between the determined indicators were calculated.Results. The results obtained indicate changes in the LPO and AOD indicators depending on age and physiological state. A significant increase in the concentration of TBA-AP in the blood of young animals 6–7 months old and heifers, compared with analogues of 1 and 3–4 months of age, indicates the accumulation of lipid peroxidation products with age. The decrease in the AOP level in the 6-month-old group of animals is also indicated by the minimum concentration of TAWSA and the trend towards a decrease in the total antioxidant status and peroxidase activity. Due to the high level of ceruloplasmin, the ratio of TBA to CP was at the level of other groups. The age of the animals had a significant effect (p ≤ 0.001) on the content of TBA-AP, ceruloplasmin, TAWSA, and the overall antioxidant status. SLE and TBA-AP are significant markers of the state of LPO and AOP in the body. The results obtained will allow monitoring the health status of animals and will help to provide timely preventive measures that increase the adaptive capabilities of young animals and the most complete realization of the genetic potential of productivity.

Effect of ripening on biochemical characteristics of tangerine tomatoes (&lt;I&gt;Solanum lycopersicum&lt;/I&gt; L.)

Relevance. When creating tomato varieties and hybrids, much attention is paid not only to the commercial component (yield, appearance and uniform ripening), but also to the taste qualities of the products. Salad tomato varieties with yellow, tangerine, and pink fruits are increasingly in demand. As a rule, these fruits do not store for a long time, so it is necessary to increase their storability and transportability. Fruits of this group of tomatoes have high antioxidant activity, which is due not only to the significant content of water-soluble antioxidants (such as ascorbic acid), but also carotenoids. The preservation of fruit largely depends on the dry matter content.The aim of investigation is to study biochemical parameters of tangerine tomatoes fruits under different ripening conditions.Materials and methods. Plants were grown in the greenhouse of Federal Scientific Vegetable Center. Biochemical characteristics of tomato fruits were studied during harvesting and after laying for storage in the milky ripeness phase according to the following indicators: dry matter, ascorbic acid, total content of water-soluble antioxidants, titratable acidity, monosaccharides, polyphenols and carotenoids.Results. The percentage of dry matter in tangerine tomato fruits does not change during storage, even increases slightly. The dry matter content of fruits from the open field is slightly higher than that of fruits from the greenhouse. The content of sugars and ascorbic acid in fruits with tangerine fruits after laying for ripening decreases slightly. However, the content of these compounds is higher in mature fruits immediately after picking than in fruits after ripening. The total content of antioxidants during ripening decreases, though not significantly (in 1.1-1.7 times).

Biochemical content and yield of some cultivars of green bean (&lt;I&gt;Phaseolus vulgaris&lt;/I&gt; L.) under Moscow region conditions

Relevance. Increased demand in Russia for common bean (Phaseolus vulgaris L.) varieties of domestic breeding has stimulated the Federal Scientific Vegetable Center of breeding to intensify research on the creation of new asparagus bean varieties of vegetable direction.Materials and methods. Four vegetable bean varieties – Secunda, Lika, Ulyasha, Si Bemol of the laboratory of selection and seed production of vegetable Legume crops of the Federal Scientific Vegetable Center were used as the material for the study. The counts and observations were made according to the Methodology of the State Variety Trial of Agricultural Crops, 1975. The count of productivity was carried out in the technical stage of ripeness by replications. Harvesting was carried out when the biological stage of ripeness was reached. Biochemical studies of plants were carried out in the laboratoryanalytical department of the FSBSI FSVC. The biochemical composition of vegetable bean (green bean) varieties was studied according to the following indicators: determination of the total content of water-soluble antioxidants, ascorbic acid, dry matter, polyphenols, monosaccharides, total sugar content and starch.Results. Evaluation of samples by aggregate factors contributes to the selection of the most promising and high-quality varieties for their introduction into production. As a result of the research of vegetable bean on the main economically valuable features and biochemical composition for the period from 2018 to 2020, the varieties Lika and Ulyasha were selected. They were distinguished by high productivity of beans and seeds. Green bean variety Lika was noted for the highest total content of water-soluble antioxidants, ascorbic acid and the total of sugars content, the green bean variety "lobio" Ulyasha - high content of polyphenols and the total of antioxidants in the alcohol extract. Stable high yield, adaptive potential and high quality of beans, confirmed by the results of biochemical evaluation, allow us to recommend these varieties for consumption by the population as part of the diet and as an alternative to meat and dairy products.

GRAPE BUNCH POLYPHENOLS, QUALITATIVE AND QUANTITATIVE COMPOSITION, TECHNOLOGICAL STOCK

The Magarach Institute has been addressing the issue of developing technologies for obtaining functional food products from grapes saturated with grape polyphenols; and of determining main properties and modes of grape polyphenol extraction from potential raw materials (pomace, seeds, crests) for the production of experimental samples of functional products. The aim of the present research was not only to experimentally determine the total stock of polyphenols in pomace, seeds, crests of red and white grape varieties, but also to assess empirically the qualitative and quantitative composition of total polyphenols in pomace, seeds, stems, vines, leaves of red and white grape varieties as functional components of a healthy nutrition. The research has dwelled upon the empiric assessment of the characteristics of grape raw materials (grape must, pomace, seeds, crests) in terms of their technological stock, quantitative and qualitative composition of polyphenols (by HPLC), and the main functional ingredients of the biological activity of grape products. An analysis of the data obtained shows that the aqueous-alcoholic extracts of grape raw materials possess the whole spectrum of polyphenols typical for red grape wines (anthocyanins, flavones, flavan-3-ols, hydroxycinnamic, hydroxybenzoic acids, stilbenes, oligomeric and polymeric procyanidins), however their concentration quantitatively exceeds that found in wines. It has been shown that the total content of water-soluble antioxidants experimentally determined by the amperometric method depends on the content of oligomeric and polymeric procyanidins in the extracts of grape raw materials. Thus, the content of oligomeric procyanidins in the extracts of grape raw materials from the sum of phenolic substances averaged 5.7%; while the content of polymer procyanides went up to 94%. The technological availability of polyphenols of pomace, stalks and grape seeds during water-alcohol extraction in the piled layer without mixing was shown, the equilibrium concentrations of polyphenols transferred into the extract and the potential amounts of polyphenols extracted during single-stage extraction (technological stock) were assessed. The maximum values of technological stock of polyphenols of 29.2–76.02 g/kg dry weight in the stalks of white and red grape varieties were determined.

ANTIOXIDANT ACTIVITY OF DAIRY PRODUCTS FOR BABY FOOD

Increasing the biological and nutritional value of breast milk substitutes by enriching different macro- and micronutrients is an important issue. To a certain extent, the nutritional value of milk is determined by its antioxidant activity.&#x0D; The research aims to compare the antioxidant activity of dairy products for baby food and breast milk.&#x0D; The current research studied cow pasteurized milk, drinking ultra-pasteurized “Tyoma,” sterilized milk for baby food “Agusha,” “NAN,” “Nutrilon,” and “Malyutka” milk mixtures, as well as breast milk of 17 women. The antioxidant activity was determined by the titrimetric permanganate method in aqueous and alcoholic milk extracts. The content of antioxidants in alcoholic extracts of milk and all dairy products significantly exceeds their levels in aqueous solutions. The content of water-soluble antioxidants in breast milk is significantly lower than in cow’s milk “Luzhaykino” and “Agusha,” but in infant formula, it corresponds to the indicators of breast milk. The level of alcohol-soluble antioxidants is lower in NAN and Nutrilon milk mixtures when compared with cow and breast milk. The milk mixture “Malyutka” does not differ from breast milk in terms of the antioxidant activity of alcohol- and water-soluble components.&#x0D; Discussion. The use of separate determination of hydrophilic and hydrophobic antioxidants revealed significant differences between breast and cow’s milk. The enrichment of milk with easily destructible, water-soluble ascorbic acid did not affect the antioxidant activity of dairy products for baby food (“Agusha” and “Tyoma”).&#x0D; The results obtained on the significant differences in the antioxidant properties of dairy products based on cow’s milk from breast milk indicate the need to optimize the composition of milk antioxidants for baby food and the creation of breast milk substitutes.

Indicators of antioxidant protection of the body of dairy cows depending on the phase of lactation and physiological state

Relevance. Studies on the assessment of the pro- and antioxidant status of the body of productive animalsare relevant, since they are interconnected with health, the state of the immune and reproductive systems. There is a steadily growing body of information in the field of oxidative stress in animal husbandry and veterinary medicine, which indicates the general importance of antioxidant defense of the body with impaired health and productivity of ruminants. There is a growing need to translate this knowledge into practical proposals for livestock specialists and veterinarians.Methods. In order to study the indicators of antioxidant protection in the body of dairy cows depending on the month of lactation and the physiological state, the following groups of cows were formed in the conditions of the PZ Ladozhsky (Krasnodar district) in the winter period of 2021: dry; lactating: 1 month; 2 months; 3 months; 4 months; 5 months; 6–7 months. The following indicators were determined in the blood of the studied animals: the concentration of ceruloplasmin, products reacting with thiobarbituric acid, the total content of water-soluble antioxidants, the general antioxidant status, and the antioxidant activity of blood serum.Results. The results obtained indicate changes in the antioxidant status in the body of cows, depending on the physiological state and month of lactation. By 5–6 months of lactation in the blood of cows the maximum levels of accumulation of LPO products are observed and the level of ceruloplasmin decreases, and the maintenance of the overall antioxidant status is carried out at the expense of other water-soluble antioxidants. The most significant changes in the studied parameters are observed between dry and lactating cows. The results obtained will allow monitoring the health status of animals and will serve as the accumulation of a database for the development of reference values for indicators of the antioxidant status in the body of dairy cows, depending on the physiological state and phase of lactation.

Influence of additions on the structure of the free fares

The article provides basic information about the functional properties of flour culinary products developed on the basis of rice and corn flour with additives of powders of vegetable origin: jerusalem artichoke, sea buckthorn, apples, carrots, tomato, paprika, dill, daminaria, and stevia extract was used as a sweetener. Balanced nutritionally adapted nutrition, corresponding to the physiological needs of schoolchildren, gender and individual characteristics of children aged 7–11 years, is necessary for the full development of physical and intellectual abilities. In this connection, the development of flour culinary products nutritionally adapted to the peculiarities of baby food, the optimization of the ingredient composition of flour culinary products, taking into account the technological properties of raw materials and biomedical recommendations for the diet of this category of nutritionists will contribute not only to achieving the best results in their development, physical and mental improvement, but will also prevent a number of alimentary-dependent diseases and conditions of this category of the population. This determines the main task of research and is relevant and promising. The purpose of the development of new specialized products is to obtain enriched gluten-free compositions for the production of high-quality pancake tape by an industrial method. The article presents data on the optimization of the ingredient composition of flour culinary products, considering the technological properties of raw materials and biomedical recommendations for the nutrition of schoolchildren of grades 1–4. The list of ingredients with immunomodulatory and antioxidant properties and the possibility of their use in the preparation of specialized flour culinary products for school meals is scientifically substantiated. Optimization was carried out using modern programs providing mathematical modeling of product formulations in the realized range of parameter changes. The qualitative and quantitative prescription composition is modeled in accordance with sanitary norms and requirements of the SanPiN 2.3/2.4.3590–20 requirements for children's food products, considering their physical exertion. The relationship between the mass fraction of protein components (rice and corn flour and egg white) and physico-chemical indicators of the quality of flour culinary products for the nutrition of schoolchildren has been established. It is experimentally proved that the use of the developed recipe compositions will contribute to an increase in the content of protein, fats, carbohydrates, vitamins, minerals, increase the biological value and the total content of water-soluble antioxidants in flour culinary products for the nutrition of students aged 7–11 years.

Content of biologically active substances in seedlings of cabbage of the genus Brassica L.

Relevance. Photosynthetic seedlings, as a model object, are interesting both in the study of nutritional value and the species response of a plant organism to the cultivation.Material and methods. The study was carried out on the basis of the laboratory analytical department of the FSBSI FSVC. The material of the research was sprouts of Brassica chinensis L., cv. Vesnyanka; Brassica oleraceae L. var. italica Plenck, cv. Tonus; Brassica oleracea L. convar. acephala DC., cv. Malinovka; Brassica oleracea var. gongylodes L., hybrid F1 Sonata and cv. Venskaya Belaya 1350; Brassica oleracea L. convar. capitata (L.) Alef. var. capitata L. f. rubra (L.) Thell., cv. Gako 741. The seeds of the 2018 harvest were germinated in filter paper cassettes using distilled water. The cassettes with seeds were placed in a thermostat under constant illumination and a temperature of 25°C. They have been germinated for 8 days, after which a biochemical analysis of the samples was carried out.Results. It was found out that the total content of water-soluble antioxidants in the studied of cabbage crops was in the range of concentrations from 3.58-4.57 mg-eq HA/g (wet weight). According to this indicator of 8-day-old seedlings, red cabbage variety Gako 741 was distinguished by the maximum values. The total content of antioxidants in the alcoholic extract ranged from 21.24 to 28.23 mg-eq HA/g (dry weight). The content of polyphenols – in the concentration range of 16.39-24.94 mg-eq of HA/g (dry weight). As a result of the research, direct correlations of the studied characteristics were revealed. A high correlation was shown between the content of water-soluble antioxidants and dry matter (r=0.72...0.98) and between the content of carotenoids and chlorophylls (r=0.98...0. 99).

АНТИОКСИДАНТНАЯ АКТИВНОСТЬ НАТИВНОГО МОЛОКА И ЕГО БЕЛКОВЫХ ФРАКЦИЙ

Compounds with antioxidant properties act as stabilizers of biological membranes and prevent the development of free-radical chain processes that lead to the development of severe diseases. Cow’s milk shows antioxidant activity due to whey proteins. Heat treatment used in dairy production technology can inhibit the antioxidant properties of milk proteins. Preserving the natural properties of milk is an urgent task. (Research purpose) The research purpose is in studying the antioxidant activity of raw milk and protein fractions isolated from it with optimal preservation of the activity of whey proteins. (Materials and methods) Authors received raw milk from an individual farm in the Moscow region. The physicochemical parameters of milk and whey were assessed by standardized methods; the fractional composition of proteins was assessed by high-performance liquid chromatography; and the antioxidant activity (total content of water-soluble antioxidants) of milk and protein fractions isolated from it assessed by amperometric method. Milk proteins were coagulated using rennet and calcium chloride. Protein fractions were separated by centrifugation (15,000 revolutions per minute) for 90 minutes. (Results and discussion) The article presents the physical and chemical parameters of raw whole and skimmed milk. The fractional composition of native serum proteins with a predominance of beta-lactoglobulin was studied. The method of milk protein isolation by rennet-calcium method was worked out at a minimum temperature of 38-40 degrees Celsius. (Conclusions) The article presents the composition of raw milk. The article presents the developed optimal conditions for isolation of native proteins from raw skim milk. The antioxidant activity of raw milk, casein fraction and whey was assessed. To maximize the preservation of the antioxidant activity of biologically active whey proteins, it is necessary to reduce the generally accepted pasteurization temperatures of milk (75-95 degrees Celsius), while at the same time searching for new methods of decontamination of milk from foreign microflora.

The effect of microwave heating of fruit and vegetable raw materials on the water-soluble antioxidants content

In the food industry, when processing fruits and vegetables, heat treatment is used. Most often, the pretreatment processing of plant materials is carried out with steam or water, as a result of which there is a loss of nutrients valuable for the human body, including antioxidants. The article proves the advantage of using microwave heating as a preliminary heat treatment of apple and beet refuse in order to increase nutritional value by increasing the content of water-soluble antioxidants in them. Thus, the content of vitamin C increases by 1.32 - 1.57 times, flavonoids by 1.77 - 2.01 times.

Nutritional value of vegetable Amaranthus tricolor L. seedlings grown in Moscow region

The use of amperometric express method made it possible to measure quickly and evaluate content of waterand alcohol-soluble antioxidants in extracts from Amaranthus tricolor L. plants. Accumulation of low molecular weight antioxidants: ascorbic acid, beta-cyanine (amaranthine) and the total content of antioxidants in various organs of Valentina amaranth seedlings were studied. The maximum amount of low molecular weight antioxidants accumulates in leaves, compared with roots and stems of seedlings grown in open and protected ground. In open ground conditions, amaranth leaves and stems have 1.5-fold and 2-fold increased level of ascorbic acid than seedlings grown in protected ground. But the total content of water-soluble antioxidants in leaves and roots of seedlings is lower compared to seedlings of protected ground. Minimum amount of antioxidants was found in alcohol extracts of stems and roots in open ground, while the total content of antioxidants in stems and roots was 1.6 fold higher in seedlings grown in protected soil. The content of amaranthine is comparable in the studied organs of amaranth seedlings of both cultivation variants. The data obtained allow to recommend use of leaves and stems of amaranth seedlings grown in open and protected ground (early spring and autumn), as a preventive antioxidant dietary product.

LEMON BALM (&lt;i&gt;MELISSA OFFICINALIS&lt;/i&gt; L.) IS A VALUABLE AROMATIC CULTURE

Spicy-flavoring cultures are an indispensable source of vitamins, macro-and microelements, organic acids. Early and rapid formation and return of the crop greatly increases the value of these crops. One of the valuable spice-aromatic plants of the family Lamiaceae L. is Melissa officinalis (Melicca officinalis L.), which is grown as an essential oil culture. Melissa officinalis contains biologically active substances that can be used to enrich food products. Fresh Melicca officinalis leaves produce essential oil which contains precious substances citronellal, citrategeneric, linalool [1]. Leaves and young shoots in the open ground cut to bloom. Consume fresh or dry melissa demanding soil fertility and irrigation. The article provides information about its origin and biological features. A brief overview of the nutritional and medicinal value is given. One of the important areas of work in the creation of modern vegetable varieties is the selection of high content of biologically active substances with antioxidant activity, and suitability for growing on hydroponic plants in protected soil to supply the population with fragrant vitamin products of fresh herbs all year round. Cv. Zhemchuzhina of Melissa officinalis can be grown in multi circle hydroponics (MCH), using natural substrate (peat mixes). Young shoots of this variety can be consumed as early as 35 days after sowing, in which the content of water-soluble antioxidants in march is 5.9 mg/g in units of Gallic acid. Subsequent cuts should be carried out at intervals of 30-45 days, depending on the season. The article also describes the main elements of the technology of growing medicinal melissa in the open and protected ground for greenery and seed production.

THE COMPARATIVE STUDY OF ANTIOXIDANT PROPERTIES OF SOME SAMBUCUS L. SPECIES

The antioxidant properties of fruits, flowers, leaves, bark (or stem) of elderberry (Sambucus nigra L.), red elderberry (Sambucus racemosa L.) and dwarf elder (Sambucus ebulus L.) were investigated. The total content of anthocyanins and total phenolic compounds content by using of Folin-Ciocalteu assay were determined spectrophotometrically. The total content of water-soluble antioxidants was investigated by amperometric method. The antioxidant activity (AOA) of plant extracts was measured using DPPH (1,1-diphenyl-2-picrylhydrazyl) radical, ABTS (2,2’azinobis(3)ethylbenzthiazoline-6- sulfonic acid) radical and FRAP (ferric reducing antioxidant power) assays. It was established that the fruits of plants of the genus Sambucus L. were characterized by the maximum level of all studied antioxidants. High content of anthocyanins and phenolic compounds was determined in the leaves of elderberry and dwarf elder. The flowers of these elderberry species were distinguished by a high total content of water-soluble antioxidants. The highest antioxidant activity was observed in fruits extracts in comparison with other parts of the plant. Higher antioxidant activity was identified in the extract of the fruits of elderberry and dwarf elder than of the red elderberry fruits. The most optimal method for evaluating the antioxidant activity of elder extracts was the FRAP assay, which showed the highest correlation between AOA and individual antioxidant components, compared to DPPH and ABTS assays. Comparative analysis of antioxidant content and antioxidant activity of various plant parts of three elderberry species showed that the most promising sources of biologically active substances with antioxidant properties are fruits and flowers of elderberry and dwarf elder.

VARIABILITY OF BIOCHEMICAL PARAMETERS OF AMARANTH PLANTS DURING CULTIVATION TO OBTAIN THE NATURAL FOOD COLORANT WITH A HIGH CONTENT OF BIOLOGICALLY ACTIVE SUBSTANCES

Amaranth leaves can be used in salads, soups, sauces enriching them with biologically active substances (in particular, ascorbic acid and phenolic compounds), as well as giving them an original taste and color. Plants were grown on the experimental field of VNIISSOK in the Moscow region. The experiment was laid on sod-podzolic soil. For the period of 2013-2016 years, biochemical parameters were investigated: total content of water-soluble antioxidants, ascorbic acid content, dry matter content, amarantine content in three amaranth varieties (Valentina, Don Pedro and Fakel) and two green leaf varieties (Pamyati Kovasa and Eku 17020) of FSBSI FSVC (formerly VNIISSOK) and INIAP selection and a correlation analysis was performed, which showed a relationship between the relative concentration of amarantine in the leaves and other biochemical parameters at different stages of plant development. The maximum accumulators of antioxidants according to the TAC parameter were the Valentina and Don Pedro varieties - up to 2.9 mg gallic acid equivalents/g. The situation was similar in terms of the content of the reduced form of ascorbic acid. So also the Valentina and Don Pedro varieties were leading with values of about 140 mg%. A positive correlation between the content of ascorbic acid and the sum of hydrophilic antioxidants was confirmed. Pamyati Kovasa and Eku 17020 varieties can be recommended as a source of green mass of leaves with a high content of ascorbic acid, red colored varieties Don Pedro, Valentina, Fakel – for obtaining red dye enriched with antioxidants.

ВЛИЯНИЕ СУММАРНОГО СОДЕРЖАНИЯ ВОДОРАСТВОРИМЫХ АНТИОКСИДАНТОВ В КОРНЕВИЩАХ НА ЗИМОСТОЙКОСТЬ СОРТОВ ИРИСА САДОВОГО (IRIS HYBRIDA L.)

The total content of watersoluble antioxidants in the rhizomes of garden iris varies depending on the hardiness of the variety. Domestic varieties have better winter hardiness than varieties of foreign breeding. The amount of antioxidant content in the rhizomes at the winter-hardy varieties of iris garden after wintering is significantly reduced. The direct positive correlation between of the average degree of the total content of antioxidants in the rhizomes of iris garden and winter hardiness was revealed. The correlation coefficient is r=0,66. Therefore, the total content of water-soluble antioxidants in the rhizomes of iris garden can be apply as a potential marker of long hardiness source material.

The experimental data on the content of water-soluble antioxidants, accumulation of vitamin C, and dry matter in plants of Monarda fistulosa L. and Monarda citriodora L. of the Lamiaceae family are presented in the article. As a result of comparative assessment the promising early ripening genotype №2 with high content of vitamin C was selected.

Birds Select Fruits with More Anthocyanins and Phenolic Compounds During Autumn Migration

We evaluated whether fruit selection by autumn-migrating birds at an important stopover site in southern New England was related to water-soluble antioxidant content of fruits. We measured total anthocyanins, total phenolics, and total antioxidant capacity in fruits from common native and non-native plant species and related this to estimates of fruit selection by free-living birds. Birds selected certain fruits over others, with arrowwood (Viburnum recognitum, V. dentatum) consumed at the highest rate, followed by Virginia creeper (Parthenocissus quinquefolia) with much lower consumption of other fruits (e.g., oriental bittersweet (Celastrus orbiculatus), multiflora rose (Rosa multiflora), winterberry (Ilex verticillata)). Antioxidant concentrations primarily differed by shrub species and less so between sites. Arrowwood spp. had the highest total antioxidants, followed by Virginia creeper, northern bayberry (Myrica pennsylvanica), chokeberry spp. (Aronia prunifolia, A. melanocarpa), multiflora rose, winterberry, and oriental bittersweet. These results are consistent with the hypothesis that free-living birds select fruits based, in part, on antioxidant content. We suggest birds may actively select polyphenol/anthocyanin-rich fruits during autumn migration to protect themselves against the potentially damaging effects of oxidative stress caused by long-distance fasting flight.
