Abstract

The article presents materials on the infl uence of storage conditions on the technological and consumer properties of natural anthocyanin dye extracted from black carrots. The solubility of the dye in various media was studied. It was found that anthocyanins do not completely dissolve in alcohol, the solubility point of the powder dye and the ratio of water to alcohol were determined. The dependence of the maximum optical density on acidity was studied when black carrot powder was dissolved in water and water with alcohol. Studies have been performed on changes in the color of an aqueous solution at diff erent pH values of an aqueous suspension prepared in accordance with GOST 2119.3-91 (ISO 787-9-81) General test methods for pigments and fillers.
