Abstract
This chapter discusses enzymes degradation and synthesizing starch and their physical properties and mode of action. Many gaps in the knowledge remain. Some are the lack of information regarding the physical properties of so many of these enzymes and disagreement over molecular size, nature of isozymes, and nature of the active site. To make matters worse, where such information is available, it is often contradictory, and many enzymes have not yet been sufficiently purified to permit their adequate characterization. Much more work remains to be done, and this chapter helps to focus attention on some of the problems still outstanding in this field.
