Abstract

Starchy tubers are of great food importance in developed and developing countries, whether for food security, cultural habits or industrialization. São Paulo stands out in the production of some of these vegetables, which together move a large volume of products in different channels. Thus, the study aimed to trace the consumption profile of these vegetables by the population. For this, a digital quiz was carried out to 561 people from different locations. Potatoes and cassava are the vegetables consumed by the largest number of people, and potatoes are the most frequently consumed. For most people, these vegetables are present in their diet on a weekly basis, and the main reason for choosing the product is the consumer preference. Supermarkets/greengrocer/retailers are the main purchasing channels. Straw potatoes are the most frequent processed food in the usual purchases, however processed products made from cassava are purchased in a greater variety of items.
