Abstract

This chapter presents an on-line determination of glucose in fermentation process. On-line determination of glucose in fermentation broths is of great interest for the control and optimization of processes in food industry and biotechnology. Because enzyme electrodes that are directly integrated in the fermenter lack the facility for sterilization and suffer from problems of recalibration and the adaptation of the concentration of glucose within the fermentation broth to the linear range of the enzyme reaction, progress has been directed toward flow-injection systems with sterile sampling and sample pretreatment to fulfill the requirements of on-line control of fermentation processes. A flow-injection system for the on-line determination of glucose is presented in the chapter.
