Abstract

This contribution focuses on a description of the history of ham from antiquity to the present day, highlighting the economic and cultural evolutions of a product that is now among the most widespread in the world. Issues linked to production systems, consumption practices and territorial promotion strategies will therefore be involved, which characterize the fundamental fields in the contemporary narrative of an agricultural product that has now become a cultural and industrial commodity with great international impact.
