Abstract
Introduction. Celiac disease (CD) is a permanent intestinal intolerance secondary to dietary intake of gliadine. Permanent strict gluten free diet to prevent long-term complications remains the current treatment. Unfortunately, long-term dietary adherence is often poor. This program is difficult and can impair the quality of life of both patients and family.
