Abstract
Intentional food contamination has existed as a threat for thousands of years throughout human history. Due to the rise of international terrorism, a discipline that actively attempts to prevent people from intentionally contaminating food was created (i.e., Food Defense). This brief chapter provides a high-level overview of food defense and some of the key concepts of food defense.
