Abstract

This study aimed to describe the swine visceral condemnation rates as well as the economic losses in a slaughterhouse from Sinop, Mato Grosso State, Brazil. This study was conducted during the period of January to October, 2008. According to the results, each part results in economic losses for the industry, caused by wrong industrial process or for diseases. This way, it was verified that the lungs represented 38.65% of the total condemnated, the liver represented 32.45%, and kidney (3.26%). It was discarded 39,593 visceral, causing economic loss in order of R$59,389.00 by wrong processing methods. Is important to review the industry routine to reduce this errors and correct identification of abnormalities found during post-mortem inspection ensure the diagnosis of diseases that can be transmitted to consumers through consumption of animal products.
