Abstract
This chapter revises how nanotechnology can contribute to improve quality and safety of packaged foods. In this regard, the use of nanosized materials for the formation of polymer nanocomposites for different purposes is exposed. Next, main applications of polymer nanocomposites are described in detail: enhancement of physical properties of packaging films such as barrier and mechanical properties through the use of nanofillers; the application of metallic nanoparticles with antimicrobial or antioxidant properties embedded in polymeric films for the development of active packages is contemplated; and the latest advances in sensors based in nanoparticles for smart packaging are described. The risks for human heath, and the environmental impact of nanotechnology applied to food packaging is also addressed in this chapter. Finally, legal issues regarding nanomaterials for food contact applications are contemplated.
