Abstract

Two of the most pressing challenges of our time are environmental pollution and food safety. Agricultural pollution is caused by a multitude of factors, including soil, water, air, animal and soil variety, humans, plants, and the food itself, all of which are a result of farming activities. Pollution of the soil and water, in particular, has historically harmed food safety, posing a serious hazard to human health. Pollutants reduce the yield of food crops as well as their nutritional quality and safety, creating a serious threat to food security that could affect Sustainable Development Goal 2: “End hunger, achieve food security, and promote sustainable agriculture” directly or indirectly. The influence of various environmental pollutants on agriculture and their impact on the food system is the subject of this chapter.
