Abstract

The last half of the 20th century brought the availability of a greater range of excellent quality, fresh products from all over the world. Today more attention is paid to the health aspect of food, but what is healthy? It is subject to relatively rapid fashion fluctuations. In doubt, people prefer the lean body over the healthy body and oftentimes, slimming food is equated with equated with healthy food wrongly. Better look for a balance of protein sources, cereals and vegetable food. For these, colorful food seems to be because of the phytochemicals they contain. Antioxidant supplements often do not replace the natural antioxidants. Barbecuing is often underestimated as a modern and healthy way of preparing food. Attention is paid to the health aspect of regional and seasonal food.
