Abstract

Descriptive analysis is the most sophisticated of the methods available to the sensory professional. A descriptive test provides word descriptions of products, provides a basis for comparing product similarities and differences, and a basis for determining key sensory attributes that impact consumer preferences. Results enable one to relate specific ingredient or process variables to specific changes to the sensory attributes of a product. The “product” may be an idea or concept, an ingredient, a protocept, prototype, or finished product as purchased and used by the consumer. Evaluation can be total, such as before, during, and after usage, or from package opening through consumption. Descriptive data are essential in focusing development efforts on variable that have an effect relative to a target population. This chapter discusses different philosophies about the descriptive analysis process, subject qualifications, replications, analysis, and subject performance measures. It provides an opportunity for sensory professionals to access the state of the field.
