Abstract

The human population is expected to increase dramatically in the coming years, resulting in increased demand for food production to ensure global food security. Today’s consumer has a great appreciation for healthier, nutrient-rich, and sustainable diets. This has stimulated the search for innovative sources of consumer products. Microalgae have great relevance and a wide range of applications, and their search and use in the food sector have been growing gradually. In this sense, this chapter aims to present the potential of microalgae as a great promise for the superfoods of the future. Besides that, current limitations and challenges for the production and commercialization of microalgae as a food product will be addressed and discussed.
