Abstract
Food and nutrition play a critical role in human health and disease. Efforts to understand the link between diet and disease are increasing in recent years and focused on designing strategies for the prevention of numerous widespread diseases. In this chapter, the field of metabolomics is described, which involves the measurement of many hundreds of metabolites in a single experiment. Metabolomics provides the capabilities to discover and develop food and nutritional biomarkers important for identifying connections between diet and disease, as well as to improve our understanding of food components, micronutrients, and their effects on the body at a molecular level. A description of the tools, processes, and practices currently used in metabolomics for analyzing complex biological samples and mixtures is provided, along with their application to the investigation of food and nutrients.
