Abstract

Preparation and starting the oven: safety checks are made at the main panel and zone panels before starting. The oven band is tensioned and started. The extraction and turbulence dampers are set and the extraction fans are started. Heat distribution dampers are set in each zone including the heat recovery zone. The zone controls allow heat distribution top and bottom, left and right to be set. The burners are lit after a purge cycle to remove any unburned gas in the baking chamber. The oven is heated to baking temperature and the band cleaner is started. Production is then started. When the oven is to be shut down, the burners are switched off. The extraction fans keep running. When the oven temperature has dropped to 100°C, the oven drive is stopped, and the main gas valves are closed. In the event of a power failure, an emergency drive will be started to empty the oven of biscuits. The ignition switches and gas supply are turned off. In an emergency, stop buttons may be used. These are located at the main panel and each oven end.
