Abstract

In this chapter, we list and show the detail operations to be carried out for starting, operating the oven on production and shutting down the direct gas-fired oven: (1) Preparation – the baking programme; (2) setting the required burner pattern; (3) recommended checks at the main control panel and zone control panels before lighting the burners; (4) completing the purge cycle and lighting the burners; (5) settings for baking, including bake time, temperature settings, extraction settings and starting the band cleaner; (6) shutting down the oven in a safe sequence; (7) action in the case of a power failure or emergency
