Abstract
This chapter presents briefly the fundamentals of ultrasound technique as a green technology for the extraction of bioactive compounds, and the main parameter to be considered for optimizing purposes. Some applications of ultrasound-assisted extractions of bioactive carbohydrates from different raw material (herbs, wood, algae, mushrooms) are also discussed.
