Abstract

Betalains are chiral water-soluble alkaloids that have been used as safe food colorants, nutraceuticals, and as starting materials for advanced materials. The increasing interest in this class of secondary metabolites of plants promoted the optimization and scale-up of methods for obtaining them. This chapter reviews the physicochemical properties of betalains and discusses the techniques available for their extraction from raw plant sources, including the advantages and limitations of microwave-assisted extraction.
