Abstract

With the increasing improvement of people's living standards and the rapid development of the food industry, the authenticity and nutrition of food have attracted global attention. The emergence of a large number of food safety problems makes it necessary to develop the technology for food authenticity identification and nutritional characterization. Aptamers are highly specific molecular recognition elements that can be used to construct on-site detection sensors (aptasensors), making it outstanding in food safety and nutrition detection. To provide a comprehensive reference for detecting the food authenticity and characterizing food nutrients, this chapter introduces the importance of food authenticity identification and nutrient composition detection and reviews the application of aptasensors in this field.
