Abstract
Food security becomes a global concern due to the stresses of gradually decreasing arable land and rapidly increasing earth population accompanied by both economy globalization and social urbanization, to furnish a sustainable food supply for the betterment of humankind, research, and development of cutting-edge technologies for food integrity (safety, quality, authenticity), or food risk assessment is of utmost importance thereof. Aptamers are single-stranded DNA or RNA selected in vitro via an iterative SELEX (systematic evolution of ligands by exponential enrichment) protocol; aptamer-based analytical schemes with creditable sensitivity and specificity have been successfully developed other than conventional column chromatographic methods or antibody-based immunological methods for the detection or identification of various deleterious food contaminants or illegal adulterants to ensure food integrity nowadays.
