Abstract

The article presents data on the biochemical composition and activity of the enzymes catalase and superoxide dismutase of β-glucanic fractions obtained by various methods of the cell wall destruction of the yeast sediments from the some autochthonous wines. It was found that yeast sediments from Rkatsiteli White and Merlot and Cabernet Red wines are the rich source of biologically active β-glucans with valuable biochemical composition. The amount and biochemical composition of insoluble β-glucanic fractions, obtained from the wine sediments, vary depending on the origin of the sediment, the method of the cell wall destruction and the biomass:extracting solution ratio.
