Abstract

Manufacturers of cocoa products control the quality of cocoa beans purchased under a contract in accordance with GOST ISO 1114-2014 “Cocoa beans. Control by cutting”. The standardized method is quite labor intensive. In order to develop a project to simplify the system for assessing the quality of cocoa tree beans, the authors carried out a cluster sample from a retail chain. Cocoa beans were manually separated into groups according to their external defects. A non-destructive microfocus radiography method was used to assess the quality indicators of cocoa beans.
