Abstract

The results of a study of the chemical composition and technological properties, and also of nutritive and biological values of Gracilaria verrucosa (Huds.) Papenf. occurring in the Black Sea are presented. The prospects are determined for the comprehensive use of this specific algal material, including the production of agar from the algae and preparation of medicinal-prophylactic, nutritive, and fodder products from algal wastes by the methods of extraction, acid hydrolysis, enrichment with Lactobacillus acidophilus, and bio-transformation.
