Abstract

Shell-and-tube heat exchangers (STHX) are used in food industries to transfer heat between two or more fluids. The main purpose of this device is to make the foods and beverages safe to consume by eliminating the microbials and increasing their shelf life. STHX are also used for heating and cooling various food products before they are being used for filling, drying, concentrating, and other processes. In the food industries, STHX are mostly preferred because of easy cleaning and sanitizing properties of the surface. The exchanger is designed based on viscosity and size of food materials that are being used and the industrial needs. STHX offer high heat transfer and low friction losses. A modification in STHX improves the heat transfer coefficient, for example, STHX can be equipped with helically enhanced tubes to improve convective heat transfer. This chapter discusses in details about the principle of STHX and their applications in food industries.
