Abstract

Heat exchangers are one of the main equipment used in the dairy industry because of their convenience to transfer energy to both auxiliary facilities and various milk products. The application of different types of heat exchangers in the dairy industry is inevitable. They are required in the process of heating or cooling of milk and the evaporation, freezing, or crystallization of milk for the manufacture of dairy products such as yogurt, cream, and ice creams. This chapter provides a brief overview of the application of different heat exchangers in the dairy industry.
