Abstract

This chapter presents eight epidemiological and methodological challenges that hinder the estimation of the economic costs and burden of foodborne disease. The chapter begins with a brief overview of the different types of societal costs of foodborne disease, why they are important to estimate, the general principles of economic analysis for US food safety regulations and the World Health Organization’s collaboration to estimate the global burden of foodborne disease. The chapter summarizes the main methods used to value the costs or burden of foodborne disease and provides examples of US and international estimates.
