Abstract

The field of the research in the nanomulsions related to food science and engineering has emerged as a distinct research area in recent years based on the three underlying research fields in food science engineering, nanomaterials and nanoprocesses, and finally emulsions. Although there have been a number of scientometric studies in these underlying research fields, there has not been any in the research field on the nanomulsions related to food science and engineering. Therefore, this chapter presents the first-ever scientometric study focusing on the 25 citation classics in this field following a brief scientometric overview of the research in the underlying research areas. The research focuses on the innovative applications of nanomaterials and nanoprocesses in the development of nanoemulsions for the food industry. The citation classics presented in this paper were helpful in highlighting important papers influencing the development of the research field as well as in determining the key research areas in this field. The research in this field has strong public policy implications providing strong incentives for the key stakeholders involved in this field.
