Abstract

Recent applications of pulsed electric energy (PEE) for the processing of food and agricultural products are reviewed in this chapter. The historical background and electroporation fundamentals for different food materials are presented. The chapter includes information about PEE treatment protocols, equipment, and chambers, and presents the main manufacturers of small- and large-scale electroporation devices. Different unit operations including PEE pretreatment: extraction, pressing, drying, freezing, crystallization, fermentation, pasteurization, and others are analyzed.
