Abstract

Membrane bioreactors (MBRs) and their potential uses in food processing and food ingredients production are discussed, where ‘membrane bioreactor’ applies to any system constituted from a reactor working with enzymes or whole cells as the catalyst and from a membrane for separation and/or contacting purposes. The various types of MBR are presented and their advantages as well as their drawbacks are discussed. Several applications of MBRs in different food areas are then presented.
