Abstract

The article presents the results of studies of bee products from different climatic zones and their comparative analysis. In addition, a literature review of materials on the infection of honey and other bee products with molds and yeasts is presented. For the study, samples were taken from the Irkutsk and Moscow regions, as well as the Republic of Buryatia. Aspergillus niger, Mucor spp and Penicillium mold fungi, which belong to toxin-forming mold fungi, were found in the studied samples.
