Abstract

The production of calcium-enriched semi-finished products is possible by including sources of this mineral in the formulations. Semi-finished products from poultry meat enriched with a mineral concentra-tor from egg shells have been developed; semi-finished products with the addition of a vegetable source of calcium — white sesame seeds, black sesame seeds. The content of calcium in semi-finished products was determined depending on the input raw materials, the organoleptic parameters of the samples were studied.
