Rationale for choosing optimal yeast races for the production of sparkling cider

The article considers issues related to identifying the most suitable varieties of apples of technical maturity of summer and autumn – winter varieties growing in the Republic of Adygea and the possibility of their use in the technological process of cider production using champagne yeast races. Local apples are in demand both in food and processing industries and among the population. This is due to their unique chemical composition. Technological maturity of experimental varieties of apples have been studied and assessed for a number of technological indicators. The article presents a comparative description of summer and autumn-winter varieties of apples that have reached technological maturity. The study has revealed that autumn-winter varieties of apples are the best for the production of cider. The possibility of using champagne yeast races in the technology of sparkling cider production has been investigated and proved. A significant influence of yeast races on the formation of aroma and taste has been established. According to the literature data, various biochemical processes occur during the fermentation process with a change in the main components of the wort, the formation and synthesis of new compounds that are involved in the formation of aroma and taste. Apple wort fermented with 7–10 Champagne race differed from the control sample and the Novotsimlyanskaya-3 race in a more harmonious taste, fresh and expressive aroma.At present, the main task of the agro-industrial complex of the Russian Federation is to use of local raw materials for the development of new technologies that meet the needs of the population. The results of the experiment have shown the possibility of using autumn-winter varieties of apples growing in the Republic of Armenia in the cider production, and also has made it possible to justify the use of champagne yeast races in this technology to obtain wine materials with high organoleptic characteristics.These studies allow to improve the technological process of cider production.

Penerapan Sistem Proposional-Integral-Derivatif Pada Hatchery untuk Meningkatkan Produktivitas Day Old Chick (DOC)

The Livestock Product Processing Technology Laboratory is one of the centers of practicum, research or community service activities at the Banyuwangi State Polytechnic where it has a hatchery machine with a capacity of 500 grains, the hatchery machine has been modified so that the temperature and humidity can be controlled properly, but the machine still has some disadvantages. In addition to frequent errors in the heater, The system used still uses an on/off control system as a temperature and humidity regulator, so it can cause over shoot or under shoot which can cause fluctuations in temperature and humidity, so it is necessary to apply Proposional-Integral-Derifativ (PID) control which is able to accelerate the response of a system, eliminate offsets and produce large initial changes The purpose of this study was to determine the performance of the tool by applying PID control to hatchery machines that were tested to hatchability and Knowing the temperature and humidity settings to get the best results from the application of PID control on the hatchery machine. This research began with the preparation of the PID control series, namely making hardware and software designs using Arduino, sterilizing hatchery machines and setting temperatures of 37ºC and temperatures of 38ºC and humidity of 65 and 67%, entering eggs for 21 days and collecting data, hatchability and hatching. The results showed that PID control provided constant temperature and humidity stability at 37ºC and 38ºC temperatures, the best temperature and humidity use treatment at 38ºC was able to hatchability of 78.26%.

BIOTECHNOLOGICAL APPROACHES TO THE CREATION OF NEW FERMENTED DAIRY PRODUCTS

The industrial production of balanced and healthy food has always been one of the most important tasks facing humanity. To solve this problem, research is relevant in the field of creating functional milk-based synbiotic products, which, along with traditional lactic acid microorganisms, include strains of probiotic bacteria with a proven specific positive effect on the macroorganism, and prebiotic substances that increase the selectivity of the benefits of the "useful" microflora of the gastrointestinal tract-intestinal tract and its biological activity.Along with lactic acid bacteria used as starters in fermented milk products, there is a population of predominantly adventitious heterofermentative lactobacilli that can have a positive effect on dairy products.This article describes the use of facultatively and obligately heterofermentative species such as Lactobacillus bulgaricus, Streptococcus thermophilus and Lactobacillus fermentum 14. The general characteristics of these species are described, as well as the desired properties (probiotic activity and taste formation) that affect the characteristics of dairy products.The general characteristics of these species are described along with the desired (probiotic activity and taste formation) properties affecting the characteristics of dairy products.Samples of yogurt based on probiotic starter cultures enriched with plant fillers were studied. The technological process of production was carried out in the traditional way. The dynamics of acid accumulation was studied, titratable and active acidity were determined. As a result of the study, it was revealed that the combination of fermented milk products with plant fillers slightly accelerates the fermentation process.

Late Roman copper smelting in Polis Chrysochous, Cyprus

Two Late Roman slag heaps located near Polis Chrysochous, western Cyprus, were studied to reconstruct the technological processes of copper production. This is the second richest mining region on the island. The Pelathousa slag heap (4th – 6th century CE) is located at the foothills of the Troodos Mountains, about 5 km inland from the coast, while the Argaka slag heap (3rd – 8th century CE) is situated by the coast. An assemblage of 112 slag pieces collected from the two slag heaps was macroscopically examined. Subsequently 49 of the samples were chemically analysed using Hand Held portable X-ray Fluorescence (HHpXRF). A smaller subset of the analysed samples were selected for optical microscopy and Scanning Electron Microscopy with Energy-Dispersive Spectrometry (SEM-EDS). The chemical and microscopic analysis showed that the samples from both slag heaps have a similar composition, including a wide variability in manganese content, which ranges from less than 1 wt% to almost 40 wt%. Manganese has most likely been added as a flux procured from the umber deposits of the Pera Pedi formation which is readily accessible from the nearby mines. The prevalence of sulfide inclusions across all samples indicates that the slag assemblage derives exclusively from copper-matte smelting. The results are then discussed to understand the difference in manganese content, and the organization of copper production within the landscape.

Genetic Engineering of Starch Biosynthesis in Maize Seeds for Efficient Enzymatic Digestion of Starch during Bioethanol Production.

Maize accumulates large amounts of starch in seeds which have been used as food for human and animals. Maize starch is an importantly industrial raw material for bioethanol production. One critical step in bioethanol production is degrading starch to oligosaccharides and glucose by α-amylase and glucoamylase. This step usually requires high temperature and additional equipment, leading to an increased production cost. Currently, there remains a lack of specially designed maize cultivars with optimized starch (amylose and amylopectin) compositions for bioethanol production. We discussed the features of starch granules suitable for efficient enzymatic digestion. Thus far, great advances have been made in molecular characterization of the key proteins involved in starch metabolism in maize seeds. The review explores how these proteins affect starch metabolism pathway, especially in controlling the composition, size and features of starch. We highlight the roles of key enzymes in controlling amylose/amylopectin ratio and granules architecture. Based on current technological process of bioethanol production using maize starch, we propose that several key enzymes can be modified in abundance or activities via genetic engineering to synthesize easily degraded starch granules in maize seeds. The review provides a clue for developing special maize cultivars as raw material in the bioethanol industry.

Application of machine learning technologies in biodiesel production process—A review

The search for renewable, affordable, sustainable, and ecologically benign fuels to substitute fossil-based diesel fuels has led to increased traction in the search for biodiesel production and utilization in recent times. Biodiesel, a form of liquid biofuel, has been found to alleviate environmental degradation, enhance engine performance, and reduce emissions of toxic gases in transportation and other internal combustion engines. However, biodiesel production processes have been dogged with various challenges and complexities which have limited its expected progression. The introduction of data-based technologies is one of the remedies aimed at deescalating the challenges associated with biodiesel synthesis. In this study, the application of machine learning (ML) –based technologies including artificial neural network (ANN), response surface methodology (RSM), adaptive network-based fuzzy inference system (ANFIS), etc. As tools for the prediction, modeling, and optimization of the biodiesel production process was interrogated based on the outcomes of previous studies in the research domain. Specifically, we review the influence of input variables like alcohol: oil molar ratio, catalyst concentration, reaction temperature, residence time, and agitation speed on the biodiesel yield (output variable). The outcome of this investigation shows that the usage of ANN, RSM, ANFIS, and other machine learning technologies raised biodiesel yield to between 84% and 98% while the statistical verification shows that the Pearson correlation coefficient and coefficient of determination are close to 1. Going forward, more targeted and collaborative research is needed to escalate the use of innovative technologies for the entire biodiesel value chain to enhance production efficiency, ensure economic feasibility, and promote sustainability.

Implementation of Green Product in Purchasing to Increase Environmental Awareness at Aston Canggu Beach Resort

The purchasing department is often said to be the buying center at the hotel company concerned. The purchasing department has a duty to ensure that the goods used for hotel operations do not damage the surrounding environment, currently environmental issues are important in economic development. The purpose of this study is to analyses the implementation of green products in purchasing at Aston Canggu Beach Resort and to analyse the relationship between the implementation of green products in an effort to increase environmental awareness at Aston Canggu Beach Resort. Methods of collecting data were observation, focus group discussions, questionnaires, documentation, and literature study. The data analysis method used is qualitative and quantitative methods, qualitative methods include several stages, namely data reduction, data presentation, and drawing conclusions, while quantitative research uses descriptive statistics. Indicators green product, including products that do not contain harmful elements when consumed, are made from environmentally friendly raw materials that provide recycling functionality, and products with production process technology used are environmentally friendly. While 1 indicator that has not been implemented is having efficiency in energy use, with the application of green products at Aston Canggu Beach Resort. It can increase environmental awareness as evidenced by the decrease in waste costs incurred by Aston Canggu Beach Resort.

The paper identifies preliminary priority aspects of progress that are relevant for the current existence of road transport enterprises (PJSC), for the development of a strategic program for the development of their production structure.The importance, measures and mechanism of assessment and formation of the strategic program for the development of the production structure of the automobile transport enterprise are shown. The expediency of controlling the indicators of the enterprise's production base is proven and their list is given. The directions of the development strategy of technological processes of service production are substantiated. The measures, programs and plans according to the directions of the company's development strategy are given. The conditions for the creation of long-term plans are formulated and the need to develop a comprehensive long-term target program for improving and developing the capacity of the enterprise's production system is proven. The criteria for the functioning of the production structure of the road transport enterprise are listed and the importance of establishing high-quality and reliable communication on production issues between various objects of PJSC is highlighted. Indicators of assessment of the level of technical and technological support of road transport enterprises are given. The expediency of assessing potential technical and technological opportunities for the formation of a strategy and tactics for the development of production has been proven. A mechanism for determining priority directions for the development of the production structure has been developed.The established system of indicators for assessing the level of effectiveness of the enterprise's production structure development program is informative.It is recognized that, taking into account the multi-vector changes in the state of the economy and society of modern countries, only consistent and continuous and small improvements with simultaneous observance of a certain strategic aspect of progress can condition development.Painstaking work was carried out on the examination of the very complex structure of PJSC, taking into account the mechanism of ensuring the effective functioning of the road transport enterprise, the technical and social problem of the possibility of effective operation of PJSC was solved, only by initiating the general and complete, permanent and simultaneous interaction of all elements and components of a large system.

Modification of Protein Hydrolyzate of Snakehead Fish as an Ingredient for Instant Seasoning Coto Makassar

Aim: This study aimed to determine the ratio formula for the hydrolyzate of snakehead fish head flour and Instant seasoning flour of Coto Makassar.
 Study Design: The experimental design used was using an independent t test (independent t-test) namely (Coto Seasoning Flour: HPKIG Flour) / (TC: THPKIG) as follows A = (TC: THPKIG) = 90% : 10% (b /b) and B= (TC: THPKIG) = 80% : 20% (w/b).
 Place and Duration of Study: The research had carried out from May 2018 to August 2019, the production of the hydrolyzate of snakehead fish head protein is Coto Makassar seasoning had committed in the Chemistry Laboratory of Agro-industry Study Program, Pangkep State Agricultural Polytechnic, hydrolyzed snakehead fish head protein flour using the spray dryer drying method had brought about at the Center for Plantation Products in Makassar. The physicochemical analysis had done in the Chemical Laboratory, Department of Fisheries Product Processing Technology, Pangkep State Agricultural Polytechnic. Amino acid profile tests using the Ultra Performance Liquid Chromatography (UPLC) method were tested at the Saraswanti Indo Genetec Bogor laboratory. and analysis of volatile compounds had carried out at the Research Center for Flavor Analysis Laboratory of Rice Plants Sukamandi, Subang.
 Methodology: The third research is the result of a study of Coto makassar seasoning flour products with the best protein to be applied to Coto Makassar seasoning flour. Applications made were snakehead fish head protein hydrolyzate and Coto seasoning flour treated with a ratio of 100% (Coto Seasoning Flour: HPKIG Flour) / (TC: THPKIG) was as follows (TC: THPKIG)1 = 90%: 10% (w/b) and (TC: THPKIG)2 = 80% : 20% (w/b). The best treatment result was carried out by the preference test on the protein coto seasoning produced, namely the study of the best ratio formula of 20 grams dissolved in boiling water A = 150 mL, B = 200 mL C = 250 mL.
 Results: Characteristics of the application of 20% snakehead fish head protein hydrolyzate flour and 80% coto seasoning flour obtained a brightness value of L* 59.23%, hue 67.13%, moisture content 10.19%, ash content 11.48%, protein content 64.20%, 1.26% fat content and 3.35% albumin content. The highest amino acid is glutamic acid 20.68%. Sensory value of taste sample application of fish head protein hydrolyzate in coto Makassar seasoning 20% ​​with the addition of 200 mL of water Assessment criteria 8 (Very like) panelists prefer it because it feels the more spicy sensation
 Conclusion: The result of the analysis obtained by the best treatment are the characteristics of the application of 20% hydrolyzed protein from snakehead fish head flour and 80% coto seasoning flour.

Additional intellect in the technological processes of agro-industrial production

Purpose. To increase the efficiency of decision-making by the operator of mechanized technological processes of agro-industrial production. Methods. ЦИФРОВЫЕ ДВОЙНИКИ КАК ИНСТРУМЕНТ МОНИТОРИНГА ПРОИЗВОДСТВЕННЫХ ПРОЦЕССОВ В ИНДУСТРИИ 4.0

The article presents a description of the trends in the use of digital technologies in production processes in the industrial complex of the Russian economy in the conditions of industry 4.0. In particular, a dynamic analysis of internal costs for the development of digital production was carried out; the cost structure for the development of digital production and the structure of the use of digital technologies in industrial production enterprises are presented; trends in the share of industrial organizations using special software for production management - CRM, ERP, SCM - systems, automated production control systems, systems for designing production and technological processes have been identified. The purpose of the article is to summarize the directions of development of industry 4.0 in the industrial production of the Russian economy, with an emphasis on the possibilities and prospects for improving the technologies for using digital twins as a tool for monitoring the production process in the value chains of products. A special place in the article is given to the analysis and prospects for the introduction of digital twins and digital shadows in the industrial complex as monitoring tools at the stages of product design and its subsequent production and operation. A generalized scheme for using tools for monitoring the production process using a software and technological platform is presented. Based on the results of the study, the following conclusions were drawn: firstly, in the Russian industry there is an annual increase in the use of digital technologies at all stages of the life cycle of products, including within integrated value chains; secondly, digital technologies are currently used as a necessary tool for increasing the competitiveness of industrial production, increasing its resource efficiency, flexibility, accuracy and efficiency of managerial decisions; thirdly, in the near future, integrated platform and technological solutions will be of decisive importance, allowing the creation of end-to-end physical and information flows aimed at the formation and development of advanced industries and technologies in the industrial complex.

РЕЗУЛЬТАТЫ ПРЕДИКТИВНОГО АНАЛИЗА ЭФФЕКТОВ ЦИФРОВИЗАЦИИ РАБОТ ПО РЕМОНТУ И ТЕХНИЧЕСКОМУ ОБСЛУЖИВАНИЮ ОБОРУДОВАНИЯ

The article reveals the importance of predictive analysis in the activities of an industrial enterprise. It emphasizes the transformation of its role and functions as a tool for solving the problems of improving production efficiency in the conditions of increasingly widespread use of digital technologies in production processes. The purpose of the study, the results of which are presented in the article, was to evaluate the product of predictive analysisмanalytical information on the results of the implementation of the equipment operation monitoring system, which provides, among other things, the application of a number of digital solutions in the organization of equipment operation control in order not only to maintain the planned volume of production, but also to ensure high efficiency of production processes. The information base of the study was made up by the reporting data of the industrial enterprise “Atyrau Oil Refinery Plant” (ANPZ), Republic of Kazakhstan, on the results of the implementation in 2020 of measures to implement a system of work monitoring in order to synchronize, coordinate and optimize production processes by eliminating the causes of downtime and excluding unproductive use of working time.

ДОСЛІДЖЕННЯ ІМОВІРНОСТІ БРАКУ СТАЛЕВИХ ВИЛИВОК НА ЕТАПІ ЗАГОТІВЕЛЬНОГО ВИРОБНИЦТВА

Problem statement and the research purpose. Now the development of methods of the technological process modeling for production preparation in the life cycle of mechanical engineering products is an actual task. Forecasting the main indicators of reliability and operational characteristics of mechanical engineering products is a priority characteristic of functionally-oriented technologies. In particular, using the mathematical apparatus of Markov chains during the development of technological processes for the production of blanks, it is possible to predict the production of steel blooms without defects and correct the terms of casting processes. Methodology of the study. The experimental results were processed according to the proposed methodology for the blanks production stage. The system of Kolmogorov–Chapman differential equations describes the created reliability flowchart and technological graph of reliability for the stage of procurement production of steel blooms. Results of the investigations. Mathematical and graphical dependencies for forecasting the probability of production without a shortage of steel blooms at a metallurgical enterprise were obtained based on the solution of a system of differential equations. Scientific novelty. The article presents an example of the optimization synthesis of the model of the casting process of steel blooms and the determined time interval with the most likely shortage of blanks. It was established that for the defined production conditions, the probability of failure is realized in a multiple of 4 (27 days) relative to the most likely term of repeated shortage over time for steel melting (109 days). Practical value of the results. The proposed technique can be effectively used during the development of technological processes for blanks production of machine parts at the technological preparation stage of production. Scopes of further investigations on the subject of the paper. Further research can be aimed at improving the proposed methodology and extending it to a wider range of materials in the process of castings manufacturing.

DEVELOPMENT OF A GENERALIZED ALGORITHM FOR THE CREATION OF CONTAINERS FOR LIQUID USING COMPUTER-AIDED DESIGN OF PRODUCTS AND TECHNOLOGIES

Designing facilities for storing various liquids (water, oil, alcoholic products, etc.) requires the use of modern computer technologies. To improve efficiency, reduce design and production costs, it is necessary to create optimal algorithms based on information models of objects, designing containers of various shapes. The proposed approach allows reducing the time for the development of new object models based on existing prototypes, which take into account the used technological production process. The implementation of this idea is possible only with the use of modern CAD systems based on adaptive-parametric models of objects and embedded programming tools to create specialized design subsystems. CAD Autodesk Inventor has such capabilities. To work with this CAD, a generalized algorithm (information model) for designing containers for liquids was proposed. The paper considers in detail the stages of the algorithm execution on the example of a plastic bottle for liquid. The created model used a tabular task of capacity parameters through Excel. To create a parametric series of containers of different shapes, it is necessary to set mathematical dependencies between the dimensions of the object and the volume. The proposed information model can be adapted for containers of different configurations. Containers can be not only plastic, but also glass. Using the proposed design information model, an adaptive-parametric model of a bottle filled with liquid was developed in CAD Autodesk Inventor.

Sunflower husk processing technology for fodder production

The article considers the possibilities of environmental protection from agricultural waste - sunflower husks. A technology for processing this waste from the oil extraction industry into a feed product using ultrasonic treatment (cavitation) is proposed. The chemical changes of this product after processing, including nutritional value, were studied. The indicators of the use of this product under the conditions of incubation of an analogue of the rumen of ruminants were studied. Positive changes in the chemical composition of the processed product and its more active fermentation in the ruminal fluid of ruminants were revealed.

Data mining and forecasting of pavement strength depending on the composition of asphalt concrete mix

The article substantiates the need for widespread introduction of computer technology and information systems in the mix production process at ACF and their quality control, which is determined by the presence of a significant number of control objects, a large array of monitored indicators, high labor and material costs of testing, low efficiency and quality of processing complex multidimensional data. It is proposed to use Data Mining methods for intelligent data analysis and prediction of pavement durability depending on the composition of asphalt mix which enable to solve the tasks of classification, regression, clustering and forecasting using artificial intelligence methods. The algorithm of intellectual data analysis and prediction of durability of the mix depending on its composition is offered and the actions at each its stage, using additional methods of data analysis, are described. The example of real raw data processing obtained from the quality control laboratory of one of the asphalt plants using Data Mining tools of STATISTICA package according to the developed algorithm is given. The prospects of using modern data processing technologies in the field of asphalt concrete quality control are evaluated. It is shown that to assess the quality of the mix and pavement durability, it is necessary to move to complex quality indicators, taking into account pavement operating conditions.

Special characteristics of technological indicators of white aboriginal grape varieties

Sparkling wines are high in demand, and they firmly occupy their strong position in wine market. In recent years, there was a reorientation of consumers from the low-price segment of sparkling wines to the mid-price and premium ones, motivating the manufacturer to be searching for new solutions for the unique high-quality wine production. One of the ways of its producing is the use of aboriginal grape varieties. At the same time, there is insufficient information about the distinctive technological characteristics of aboriginal grape varieties, which makes it difficult to release a product of high-quality. As a research result, significant indicators were established (the mass concentrations of titratable acids, proteins, polysaccharides, the content of phenolic substances in the must without contact with the pulp, the content of phenolic substances in the must after extraction of the pulp for 4 hours, the technological stock of phenolic substances) to differentiate grapes in accordance with the origin, and characterize their technological potential. A comparative analysis of aboriginal grape varieties with classical cultivars traditionally used in sparkling wine production was carried out. Deviations in the criterion technological indicators of aboriginal grape varieties were established to be taken into account when selecting grape processing technology for high-quality sparkling wine production.

The concept of development of high-tech agricultural production of Ukraine has been developed based on the principles of sustainable development and the innovative concept “Industry 4.0”, which will ensure high and sustainable economic growth of the agricultural sector, the development of domestic agricultural machinery and related sectors of the economy. Strategic tasks for agricultural science on the development of the technical and technological base of highly automated agricultural production are identified. Conclusions. The study of modern trends in the development of the economies of advanced countries and their effectiveness give grounds for asserting that the specified strategic directions of technical and technological modernization of the agricultural sector will be the basis for the formation of an effective model for the development of high-tech agricultural climate-oriented production in Ukraine.
