In recent years it has been reported that pectic substances have the action of lowering the level of cholesterol in blood plasma.In the present paper, the contents of pectic substances in ten kinds of Maccha, four kinds of Sen-cha, Gyokuro, Black tea and Oolong tea were examined.As first, the tea was treated over and over again with boiled 95% ethyl alcohol so as to remove alcohol-soluble substances.The precipitate materials obtained were successively divided by the fractional extraction method into three portions which were soluble in water, 0.5% ammonium oxalate and 0.05N sodium hydroxide.The pectin content as anhydrogalacturonic acid in each pectin-soluble fraction was quantitatively determined by a method of carbazol reaction.The total content of anhydrogalacturonic acid in the tea was as follows:Maccha: 4.04-4.77%, Sen-cha: 2.57-3.39%, Gyokuro: 2.81%, Black tea: 2.46%, Oolong tea: 3.85%.
