In Nigeria, women play a major role in food processing, preparation, and preservation using indigenous technology. The techniques employed by the processors are time consuming, laborious, and inefficient since only limited quantities can be handled at a time. Efforts have been made to introduce modern technological systems and food processing but most of these attempts have not been successful. The few modern technological food processing systems that have been widely accepted have common characteristics such as simplicity of use, cheap costs, and does not cause unemployment for some members of the production chain, etc. This paper is geared towards identifying some areas of the indigenous food processing systems, where and why modern technology has been adopted, and also make recommendations for integrating affordable upgraded technology where such are needed.
